4 c Chablis wind
1 c Green creme de menthe

1 t Dried mint (crushed)
2 T Louisiana hot sauce

The Ultimate marinade for the most TENDER Lamb / Baby-Goat Roast
Lamb roast is a traditional Easter recipe in many countries. We like to combine lamb with baby goat, but this recipe works even if you're using just one of the 2 types of meat. This marinade makes the meat super-tender, making the meat easily falling off the bone.
???? Go shopping for these ingredients (serves 6):
_MEAT_
☑ lamb meat (1 back leg + ribs)
☑ kid (baby goat) meat (1 back leg + ribs)
You can use only 1 type of meat.
_MARINADE_
????Wet ingredients:
☑ sunflower or olive oil – 200 ml (1 cup)
☑ white wine – 200 ml (1 cup)
☑ red wine – 200 ml (1 cup)
????Dry ingredients:
☑ 10 green onions stems
☑ 10 green garlic stems (or 7 garlic cloves)
☑ fresh or dried rosemary – 4 tbsp
☑ dried thyme – 1 tbsp
☑ bay leaves – 3-4 pieces
☑ peppercorns - 1 tbsp
☑ ground pepper - 1 tbsp
☑ salt (start with 1,5 tbsp and add to taste)
➥ Step 1. Prepare the marinade
In a bowl, add the chopped green onions and green garlic (or minced cloves), with the rest of the dry ingredients. Combine.
➥ Step 2. Prepare the meat
Make small incisions with a sharp knife in the legs. Place all the lamb and baby goat meat in a large roasting pan. Stuff the incisions with some of the dry combo you prepared at Step 1. The rest of your dry combo goes in the roasting pan, together with the wet ingredients (oil + the red & white wine). Use your hands to blend everything nicely.
➥ Step 3. Marinate the meat
Cover the roasting pan and place it in the fridge to marinate for 48-72 hours. After 24 hours, flip the meat to get the flavours on the other side.
➥ Step 4. Cooking process (about 3 hours)
Preheat the oven on low to medium heat (160°C / 350°F / 3 for gas).
Remove 1 or 2 bay leaves, as their flavour can be pretty strong. Cover your roasting pan with a lid or aluminium foil.
Cook for 2 hours with the lid on.
After 2 hours, remove the lid and flip the meat upside down. At this point you can taste the sauce and make it to your taste, adding salt/pepper.
Let it roast (without the lid) for about 1 hour with the fan turned on.
By now, the meat should be extremely tender and with a nice colour.
Serve with roast potatoes, french fries or a side-dish of your choice.

Greek Style Roast Leg of Lamb (Perfect for your Easter Table!!)
Printable Recipe:
Ingredients
1 leg of lamb, bone-in, about 7-8 pounds
10 or more garlic cloves, cut into slivers
2 onions, quartered
salt (about a half teaspoon per pound)
freshly ground black pepper
2 sprigs of fresh rosemary
1 cup of water
1/3 cup fresh lemon juice
1/4 cup olive oil
2 teaspoons dried crushed oregano,
Instructions
Preheat the oven to 350 °F, 180 °F.
Use a sharp knife to cut slits into the leg of lamb. Stick the garlic slivers into the slits.
Place the lamb in a large roasting pan.
Combine the lemon juice and olive oil together and pour it all over the lamb. Season the lamb on both sides with salt, pepper, and oregano.
Add the rosemarry sprigs and the onions to the pan. Pour the water into the pan.
Cover the lamb with a sheet of parchment paper and then tightly with aluminum foil.
Bake for 3-4 hours or until the meat is soft and almost falling off the bone.
Remove the foil and parchment and place the pan back into the oven and onto the middle rack. Turn the broiler element on and broil for 5-10 minutes or until the top is golden. Keep a close eye on it so that the lamb does not burn.
Serve with roasted lemony potatoes, tzatztki, and Mediterranean Rice pilaf. Enjoy and Kali Orexi!
Notes
Marinate the meat and insert the garlic cloves the day before serving. Keep it refrigerated and allow the meat to come to room temperature before roasting.
