How To make Maple Syrup Nut Cake
2 1/4 c Flour
3 t Baking powder
1 c Maple syrup
1/2 c Milk
1 c Chopped nuts
1/2 c White sugar
1 t Salt
1/2 c Soft shortening
2 ea Eggs
Sift dry ingredients together into bowl. Add syrup, shortening and milk; beat 2 minutes. Add eggs and beat 2 minutes. Add choppeed nuts and mix well. Pour into 2 greased and floured 9" pans. Bake in 350? oven for 25 to 30 minutes. Frost. By Pamela Graves - Serves 18

Ingredients
3 Cups of Apples
250 grams of Self Raising Flour or (250 grams of All purpose flour )
If using All purpose flour add 1 Teaspoon of Baking powder
140 mls of Vegetable Oil ( you could use 175 grams of butter if you prefer )
100 grams of Soft light brown sugar
100 mls of Maple Syrup
2 Eggs
1 to 2 Teaspoon of Vanilla paste
50 grams of Chopped Pecans
Icing sugar for icing the cake (optional)
Method
In a Bowl Sieve 250 grams of Self raising flour
Add The Light brown sugar into a separate mixing bowl
Add the Chopped Pecan Nuts
Add The Maple Syrup
Add the Vegetable Oil
Add The Vanilla Paste or essence
Whisk to combine
Add the Eggs 1 at a Time
Add the Chopped Apples into the flour and mix to coat the Apples with the flour
Now add the wet mixture into the flour and fold in using a spatula
Pour the Mixture into a lined 8 inch baking tin
Place in a preheated oven 175 c for 40 to 50 minutes
Test the cake with a toothpick to ensure the cake is cooked
Leave to cool completely
You can Ice the cake with any flavour icing or leave the cake un iced
I used 2 tablespoons of Amarula and 50 grams of icing sugar but the icing is optional
Serve and Enjoy with a Cup of Tea or Coffee
