How To make Mandelbrodt with Chocolate Chips
3 c All-purpose flour
2 ts Baking powder
1/2 ts Salt
1 c Vegetable oil
(plus 1 tablespoon oil) 1 c Sugar
3 lg Eggs
1 c Pecans; finely chop
4 oz Semisweet chocolate chips
5 tb Sugar
1 tb Ground cinnamon
Recipe by: Jo Merrill These cookies freeze well. Preheat oven to 375 degrees. Grease 2 baking sheets. Mix flour, baking powder and salt in medium bowl. Beat oil, 1 cup sugar and eggs in large bowl. Gradually add 2 cups flour mixture, beating constantly. Fold in pecans and chocolate chips. Add remaining flour and mix well. Lightly flour your hands and divide dough into 4ths. Transfer to baking sheets. Shape into flat loaves about 3 inches wide and about 3/4 inch high. Combine remaining sugar and cinnamon in small bowl and sprinkle evenly over each loaf. Bake 20 minutes. Cut each loaf into 1/2 inch slices. Turn slices cut side up and continue baking until toasted and golden, abouy 15 minutes. Cool completely and store in airtight containers. -----

Babushka Bakes Mandel Bread

This recipe is inspired by the link, but Babushka will leave her version below:
Babushka's Mandel Bread (half recipe for people who live alone or don't want to share):
1 Cup of Flour
1/2 Teaspoon of Baking Powder
A pinch of salt (don't forget this step like Babushka did)
An Egg
1/4 Cup of Sugar
1/2 Teaspoon of Vanilla Extract
1/4 Cup of oil (Use any kind, Babushka uses canola)
1/4 Cup of Sugar Mixed with 1/2 Teaspoon of Cinnamon
As many chocolate chips as you want (or whatever kind of add-ins you want, just don't use raisins).
1. Preheat Oven to 350 degrees Fahrenheit
2. Combine the dry ingredients.
3. Combine the wet.
4. Combine both.
5. Mix them, give up, and just knead it.
6. Add the chocolate chips.
7. Lay it flat on the parchment paper (like a blob). Make it as thin or thick as you want, let the spirit of Babushka guide you.
8. Put it in the oven for 25-30 minutes.
9. While in the oven, combine the sugar and cinnamon.
10. Take it out, cut it into vertical strips, and separate. Sprinkle with cinnamon-sugar mixture.
11. Put it back in the oven for another 15 minutes (use this time if you want it softer, add another 5 to 10 minutes for a crispier cookie).
12. Remove from oven, and add remaining cinnamon-sugar.
13. Let cool for 5-10 minutes.

GRANDMA GEITEL'S MANDELBREAD
2 CUPS SUGAR, DIVIDED
3 LARGE EGGS
1 CUP VEGETABLE OIL
3 ¾ CUPS ALL PURPOSE FLOUR
2 TEASPOONS BAKING POWDER
½ TEASPOON SALT
1 TEASPOON VANILLA EXTRACT
1 (6 OUNCE) PACKAGE SEMISWEET MINI MORSELS
1 ½ TEASPOONS GROUND CINNAMON
BEAT 1 ½ CUPS SUGAR AND EGGS AT MEDIUM SPEED.
ADD OIL AND THE NEXT FOUR INGREDIENTS; BEAT UNTIL
BLENDED. STIR IN SEMI SWEET MORSELS MORSELS.
DIVIDE DOUGH IN HALF; SHAPE EACH PORTION INTO A 10X3 INCH LOG ON LIGHTLY GREASES BAKING SHEETS (DOUGH WILL BE STICKY). SHAPE DOUGH WITH FLOURED HANDS, IF NECESSARY.
BAKE AT 350 DEGREES FOR 25 TO 30 MINUTES UNTIL LIGHTLY BROWNED.
COOL SLIGHTLY; CUT DIAGONLLY INTO ¾ INCH THICK SLICES.
COMBINE REMAINING ½ CUP SUGAR AND CINNAMON; SPRINKLE OVER SLICES.
BAKE 5 MINUTES MORE AND COOL COMPLETELY ON WIRE RACKS.
Nana Anne's Mandel Bread (Mandelbrot)
Mandel bread (Mandelbrot) are twice-baked cookies similar to biscotti, and all you need are a few basic ingredients. With their crunchy texture, pure almond flavor, and a hint of cinnamon, they're a delicious food hug from Grandma!
