Loaded BBQ Chicken Nachos

Serves 4
Ingredients:
1 tablespoon canola oil
2 chicken breasts, finely diced
½ tablespoon Kosher salt
½ tablespoon freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon chili powder
¾ cup barbecue sauce
1 13-ounce bag of tortilla chips
2 cups shredded cheese blend
½ red onion, finely sliced
1 tomato, diced
8 bacon strips, cooked and crumbled
2 tablespoons parsley, finely chopped
1/2 cup sour cream
1 avocado, diced
Preparation
Preheat oven to 350°F.
Heat the oil in a pan over high heat. Cook the chicken with salt, pepper, garlic powder, and chili powder for two to three minutes. Add the bbq sauce and cook until the sauce has reduced by about half, about five minutes. Remove from heat.
In a large skillet, spread out two large handfuls of tortilla chips. Layer with half of the bbq chicken, followed by half of the cheese, onion, tomato, bacon, and parsley. Repeat with the remaining ingredients. Bake for 15 minutes.

Nachos with Salsa & Cheese Sauce
Serves 5-6

Ingredients:
Prepare Cheese Sauce:
-Cheddar cheese grated 1 Cup
-Doodh (Milk) 1 Cup
-Corn flour 1 tbs
-Hot sauce 1-2 tbs
Prepare Salsa:
-Olive oil 3 tbs
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) chopped 1 tbs
-Tamatar (Tomatoes) deseeded & chopped 3-4 medium
-Jalapenos chopped 2 tbs
-Tomato puree 1 tbs
-Paprika powder ½ tsp
-Hari mirch (Green chili) chopped 2
-Dried thyme ½ tsp
-Dried oregano ½ tsp
-Lal mirch (Red chili) crushed 1 tsp
-Rosemary ½ tsp
-Cheeni (Sugar) 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Namak (Salt) ½ tsp or to taste
Prepare Sour Cream:
-Cream ½ Cup
-Lemon juice 2 tsp
Prepare Nachos:
-Makai ka atta (Maize flour/Cornmeal) sifted 1 Cup
-Maida (All-purpose flour) ½ Cup
-Dried oregano ½ tsp
-Namak (Salt) ½ or to taste
-Cooking oil 2 tsp
-Pani (Water) ½ Cup or as required
-Cooking oil for frying
Directions:
Prepare Cheese Sauce:
-In sauce pan,add cheddar cheese,in milk,add corn flour,mix well and add it in sauce pan.
-Add hot sauce,whisk well and cook on low flame for 15 minutes or until desired consistency and keep mixing continuously.
-Let it cool down and keep mixing continuously.
Prepare Salsa:
-In frying pan,add olive oil,onion,garlic,tomatoes,jalapenos and mix well.
-Add tomato puree,paprika powder,green chili,dried thyme,dried oregano,red chili crushed,rosemary, sugar,black pepper powder and salt,mix well and cook on high flame for 1-2 minutes & set aside.
Prepare Sour Cream:
-In cream,add lemon juice,mix well & let it rest for 10 minutes.Sour cream is ready!
Prepare Nachos:
-In bowl,add maize flour/cornmeal,all-purpose flour,dried oregano,salt,cooking oil and mix well.
-Gradually add water and knead until medium hard dough is formed,cover and let it rest for 15 minutes.
-Take a dough and divide into two equal parts and make a ball.
-Sprinkle flour and rolled out with the help of rolling pin.
-Cut into triangular shape with the help of the cutter and prick with fork.
-In wok,heat cooking oil and fry on low flame until golden brown.
-Can be stored in air tight container for up to 2 weeks.
-Top nachos with salsa,cheese sauce,jalapenos,black olives,green onion leaves,sour cream & serve!

-Thanda ker lein aur musalsal mix kertay rahein.

Prepare Sour Cream:
-Cream mein lemon juice dal ker ache tarhan mix karein aur 10 minutes kliya rakh dein.Sour cream tayyar hai.
Prepare Nachos:
-Bowl mein makai ka atta,maida,dried oregano,namak aur cooking oil dal ker ache tarhan mix karein.
-Thora thora ker ka pani shamil karein aur ghond ker medium hard dough tayyar ker lein aur dhak ker 15 minutes kliya rakh dein.
-Dough ko do hisson mein divide ker lein aur ball bana lein.
-Maida chirak dein aur rolling pin ki madad sa bail lein.
-Cutter ki madad sa triangular shape mein cut karein aur frok sa prick ker lein.
-Karhai mein cooking oil garam karein aur halki ancch per golden brown hunay tak fry ker lein.
-Air tight container mein dal ker 2 weeks tak store ker saktay han.
-Nachos per salsa,cheese sauce,jalepenos,black olives,hara pyaz aur sour cream dal ker serve karein!

Beef Mixture
1 lb ground beef
3 Tbsp of liquid from canned Chipotle peppers in Adobo
3 cloves garlic
1 tsp cumin
salt and pepper
Nacho Cheese sauce
1/2 cup American cheese
1 cup cheddar cheese
1 1/2 Tbsp flour
1 1/2 Tbsp butter
1 cup milk
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp cumin
Guacamole
1 ripe avocado
1 lime
1/4 cup chopped tomato
1/4 cup chopped onion
1/2 jalapeno chopped
1 Tbsp chopped cilantro ( I used too much)
salt to taste
Toppings
Sour cream
thinly sliced jalapenos
diced tomatoes
In a frying pan over medium high heat, add oil then add your beef and let sear for 2-4 minutes. Then flip and cook for another 2-4 minutes. Next, break up the beef into small pieces and cook until completely brown. Then add adobo sauce, garlic, cumin and salt and pepper. Set aside.
In a pot over medium low heat, melt butter then add flour constantly stirring for 1 minute. Then begin to add your milk while whisking. Once you've added all your milk and the sauce is thickened, turn off the heat and add your cheese. Whisk until completely melted. Then add cumin, garlic powder and paprika. Salt and pepper. Keep warm and set aside.
Scoop avocado in to a bowl. And add salt and lime juice. Mash until smooth. Then add tomatoes, onion, jalapeno and cilantro. mix until combined.
To assemble, layer chips then cheese beef, tomatoes, jalapeno and repeat. Top with sour cream and guacamole. Enjoy!
