FRENCH BAKING! How to make Pain de Mie, the classic French sandwich loaf
Welcome back to Heronbrook Farm Kitchen! Croque Monsieur anybody? A delicious French classic, a ‘Croque’ is a toasted sandwich with cheese, ham and bechamel sauce. A good one is like a little piece of heaven and usually puts the humble English ‘toastie’ to shame. In order to make the perfect Croque Monsieur, however, you need the perfect bread and this is where the Pain de Mie comes in. Literally translated as ‘Bread of Crumb’, the Pain de Mie is the nearest the French come to a white sliced loaf and is so-called because it is the only French bread without a developed crust. It’s very straightforward to make at home so jump into the video and get baking!

How to bake Pain de Mie Bread
Pain de mie is bread baked in an enclosed box for a more dense loaf that is well suited for sandwiches, croutes, French toast, etc. You will need a Pullman pan, which is a bread pan with a lid. The dough uses typical bread ingredients—flour, yeast, liquid (milk in this case), sugar, salt, and fat (butter)—and the rising time is about the same. It's the finished loaf that sets this bread apart from all the others. My favorite use for pain de mie is to make French toast and then top it with sliced strawberries and whipped cream, which I think is much better than strawberry shortcake.

Pain De Mie Bread (No Egg) Making Using Mayer Bread Maker MMBM12
Try out this recipe taken from the net quite sometime back.I wanted to credit the person but realised there is no name to be found. Anyway this is a cool bread without egg ( for those seeking to make bread without egg). Very easy recipe and everything turns out perfectly well.The bread is soft to my liking. Texture is good without being dense or wet except the height of bread look shorten. I don't know is it due to the amount of bread flour being used. It's a nice bread. Go and try it and you will know. Recipe I posted below.

21g fine sugar
162ml water
15g cooking oil
1/2 teaspoon salt
1 teaspoon yeast
