How To make Low Fat Rice Krispies Chocolate Chip Cookies

flour, all-purpose

baking soda

butter, softened

cream cheese, nonfat, softened

sugar
1/4
cup
egg beaters
1
teaspoon
vanilla
2
cup
rice krispies, cereal
4
oz
chocolate chips, reduced fat
1
vegetable cooking spray
Directions:
In small mixing bowl, combine flour, soda and salt. Set aside. In large mixing bowl, beat together butter, cream cheese and sugar until light and fluffy. Add egg substitute and vanilla. Beat well. Add flour mixture, mixing until combined. Stir in rice krispies cereal and chocolate morsels. Drop by level measuring-tablespoon onto baking sheets coated with cooking spray.
Bake at 350 degrees for about 12 minutes or until lightly browned. Remove immediately from baking sheets and cool on wire racks. Store in airtight container.

If you like rice krispies treats AND peanut butter, then this recipe is definitely something you want to try! I used Skippy's creamy peanut butter and regular chocolate chips and melting candies for the chocolate layer. I would have used only melting candies, but I ran out and needed more chocolate because WHO wants a thin layer of chocolate?? haha! I hope you give this recipe a try!

Ingredients:
1/4 cup butter
1 10oz bag mini marshmallows (about 5 cups)
1/2 cup peanut butter
6 cups rice krispy cereal
8 oz chocolate chips (about 1 1/2 cups)
2 tsp vegetable oil to thin out chocolate
9x13 inch baking dish
Directions:
Melt the butter over low-medium heat. Once the butter has mostly melted, add in the marshmallows. Once the marshmallows start to melt, add in the peanut butter. After everything is nice and melted, turn off the heat and add in the rice krispy cereal. Give everything a good mix.
Lightly spray a 9 x 13 inch baking dish with non-stick cooking spray. Drop in your cereal mixture and evenly spread it out in the dish.
Melt the chocolate in the microwave for 1-2 minutes, stirring every 20 seconds or so. If the chocolate is too thick, add in 2 tsp of vegetable oil to thin it out. Pour the chocolate onto the cereal and spread it out evenly coating the top. Let the chocolate set for 2 hrs before cutting into.
Store in an air tight container at room temp.

BROWN RICE CRISPY TREATS
1/2 cup of all natural crunchy peanut butter
1/2 cup of brown rice syrup
4 cups of brown rice crispy cereal
1 teaspoon vanilla extract
1/3 cup of chocolate chips, (optional)
Mix peanut butter, rice syrup, and vanilla and heat over a low heat in a small sauce pan until the mixture becomes warm and syrup (this will only take a few minutes).
While your peanut butter syrup is heating, spray a large bowl with cooking spray before adding the rice cereal. Pour ooey gooey peanut butter syrup over the cereal and combine until all of the rice cereal is evenly coated.
Transfer brown rice into an 8x8-baking dish that has been lightly coated with non-stick cooking spray. Pat them down and make them nice and even, pop in the fridge about an hour or so, then cut em’ up and enjoy!

Dark Chocolate Rice Crispy Squares
Full Recipe:
1 Bag of Dark Chocolate Chips ( I use Lily's Sweets Sugar free)
1/3 Cup of Sunflower Seed Butter (Trader Joe's is my Favorite but any brand will do)
3 Tablespoons of Ghee - 2 at the beginning and one towards the end
2 1/2 Cups of Brown Rice Cripsy Cereal (unsweetened - I use Erewhon Brand)
1 Tablespoon of Lakanto Syrup
1 Tablespoon of Vanilla Extract
Powdered Lakanto - as much as you'd like.
I like to keep my recipe as low in Sugar as possible which is why I use Lakanto Monk Fruit Sweetener and sugar free Chocolate chips. You can Substitute those for regular Dark Chocolate chips, Maple syrup and Powdered sugar if those items are not available to you.
If you are vegan substitute the ghee with coconut oil or vegan butter :)

Yessssss they are that delicious! Ok not one of my low fat recipes but remember that you can enjoy everything in moderation! And they make a fun treat to make with your children or grandchildren too!
The no bake cookies are a great, quick and easy recipe to satisfy your chocolate and sugar cravings very quickly!!
Ingredients:
1 pkg of milk chocolate chips or any other kind you want
4 cups of Rice Krispies
1 cup of Peanut Butter ( crunchy or smooth)
2 cups of marshmallows
Options:
Add coconut
Add nuts
Add craisins
Add sprinkles
Add dried fruit
Add seeds
try other cereals too!!!
Directions:
Add water to a medium pot and add a Pyrex bowl on top
Add pot and bowl to a medium to high temperature on your oven
Allow water to come to a boil
Add chocolate chips to the bowl and mix until melted
Add peanut butter to the chocolate and allow to melt and mix well
once melted together use oven mitts to take off the oven ( Be Careful)!
Set aside for a minute or so to cool
Then add Rice Krispies and marshmallows
Mix together!
Use a large spoon to drop spoonfuls of the mixture to the cookie sheet!
Add to the freezer to harden quickly ( approximately 30 minutes or so)!
Add to a sealed container or Baggie if they last that long!
Keep them in your fridge or freezer!
