How To make Low Fat Lobster Canapes
Ingredients

toast rounds
1/4
cup
tartar sauce, fat-free
1/2
cup
mushrooms, chopped
1
each
garlic, clove, minced
1/4
cup
water
1/8
cup
white wine
1 1/2
cup
lobster, cooked, chopped
1
paprika, to sprinkle
1 1/2
tablespoon
horseradish
3
tablespoon
parmesan cheese, fat-free
1/4
cup
mayonnaise, fat-free
1
watercress
Directions:
Spread toast rounds with tartar sauce; set aside. In nonstick skillet over high heat, saute mushrooms and garlic in water and white wine until liquid has evaporated. Remove from heat and cool for 15 minutes. Transfer to medium size bowl. Mix mushroom mixture and lobster together. Sprinkle mixture equally over tartar sauce on each round and dust with paprika. Chill in refrigerator for one hour.
Fifteen minutes before chilling is complete, combine horseradish, cheese and mayonnaise, mix well. Press mixture through pastry bag and place a border on each round. In center of each canape, place a sprig of watercress.
Makes 12 servings.

One thing that I often miss on keto is a good soup. Lobster bisque ranks as one of my favorites, but has always been off limits due to the carb load and glycemic index of some of the ingredients. Thankfully with a bit of work (and lots for failures) I was able to create this recipe for a keto lobster bisque soup. It delivers all of the creamy seafood flavor with a fraction of the carbs and about half the time. Enjoy!
