How To make Low Calorie Eggnog
7 1/2 Eggs, separated
15 c Skim milk
3 3/4 ts Vanilla extract
22 1/2 ts Equal sweetener (3 pkg)
1 7/8 ts Brandy or rum flavoring
Ground nutmeg Combine the egg yolks and milk in a saucepan. Cook over medium heat until the mixture coats a metal spoon. Cool. Beat the egg whites until soft peaks form. Add to the egg custard mixture with the vanilla, sweetener, and flavoring. Mix lightly. Cover and chill. Pour into serving cups and sprinkle with nutmeg. 1/2 cup serving - 70 calories, 1/2 med-fat meat Exchange + 1/2 Milk exch. 6

Low Fat Eggnog ~ Homemade & Delicious
In this video I cook Eggnog from scratch, using milk, eggs, sugar, flour, and salt. I cook it on medium to low heat till the temperature reaches 160, then added Vanilla, Rum Extract and Nutmeg. I then pour this cooked mixture through a sieve to strain out any clumps. The cooked misture is refrigerated for a few hours. I pour it through a sieve agian just to make sure I have no lumps and then I add Half n Half cream and more Nutmeg. The flavour can be addjusted to taste by adding real Rum. I have been making homemade Eggnog for the Christmas and New Year holidays many years now. Thanks for watching and please like and subscribe.

WHAT YOU’LL NEED:
-1 cup milk
(I used cashew milk)… read your milk carton ingredients and make sure it’s solely “nut” & water & maybe salt
-2 egg yolks
(pasture raised preferably)
-1 tbsp maple syrup
(add more if you want it sweeter, honey works)
-1/4 tsp cinnamon
(i put a lot more, which is why mine’s darker)
-1/2 tsp vanilla
(i put a lot more, which is why mine’s darker)
-1/4 tsp nutmeg
*optional: 1/4 cup water, if you like it thinner
DIRECTIONS:
In a pot (placed on your countertop, not on heat yet):
-whisk together the milk, maple syrup & egg yolks
-bring over medium heat
-as soon as it begins to bubble, remove from heat and let it sit for 15 minutes
-whisk in the cinnamon, nutmeg & vanilla
Serve warm or let chill in the fridge
Top with a cinnamon stick

In this video I will share my christmassy fully raw vegan eggnog with you! Most of the eggnog recipes is high in both sugar and fat, so in this recipe I made a low fat version, and all the sugars is natural and come from fruit! :)
