How to Make a Lower Calorie Lasagna for Weight Loss
How to Make a Lower Calorie Lasagna for Weight Loss
In this week’s episode of Lower Calorie Kitchen, I make one of my all-time favorite comfort foods – Lasagna. We swap out a few of the ingredients for lower-calorie alternatives to make this something we can enjoy anytime, not just once in a while.
***After filming this video, I realized I always end up with sauce leftover when I make this recipe. I usually end up using it for spaghetti or freezing it (it freezes really well). So keep in mind the calories and macros I give are with the extra sauce included. The true calorie count of the dish is actually even lower than stated in this video. I plan on doing an updated video in the future where I recalculate the calories ***
I really hope you like this video, and let me know if you make the lasagna! Don’t forget to stay tuned for my next episode!
Original lasagna recipe:
Watch this to see how to make the sausage:
My Lower Calorie Lasagna
12 Servings
Ingredients for the spicy Italian sausage:
· 1 pound ground turkey 93%
· 1/8 tsp Truvia brown sugar blend
· 1/8 tsp dried thyme
· 1/8 tsp dried oregano
· 1/4 tsp fennel seeds
· 1 tsp garlic powder
· 1 tsp onion powder
· 1 tsp crushed red pepper flakes
· 1 tsp dried basil leaves
· 1 tsp salt
· 1 tsp ground black pepper
· 2 tsp paprika
· 1 tbsp red wine vinegar
· 1 tbsp dried parsley
Ingredients for the rest of the lasagna:
· 12 oz ground turkey 93% (or beef)
· 1/2 cup minced onion
· 1 tsp minced garlic
· 1 (28 oz) can crushed tomatoes
· 2 (6 oz) cans tomato paste
· 2 (8 oz) cans tomato sauce
· 1/2 cup water
· 2 packets Stevia in the Raw
· 1.5 tsp dried basil leaves
· 1/2 tsp fennel seeds
· 1 tsp Italian seasoning
· 1.5 tsp salt
· 1/4 tsp ground black pepper
· 2 tbsp dried parsley
· 15 ounces Meijer low fat ricotta cheese
· 1 egg
· 3/4 cup grated parmesan cheese
· 6 barilla oven-ready lasagna noodles
· 12 oz fresh mozzarella cheese, sliced (I like using BelGioioso pearls)
*Prep the night before*
· Mix all ingredients listed for spicy Italian sausage in a large mixing bowl, wrap in cling film, and refrigerate overnight.
*The next day*
· In a Dutch oven, cook Italian sausage, ground turkey, onion, and garlic over medium heat until well browned.
· Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with stevia, basil, fennel seeds, Italian seasoning, 1 teaspoon of salt, pepper, and 1 tablespoon of parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
· In a mixing bowl, combine ricotta cheese with egg, the remaining 1 tablespoon parsley, and the remaining 1/2 teaspoon salt.
· Preheat your oven to 375 degrees F (190 degrees C).
· To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 3 noodles lengthwise over meat sauce. Spread with one-half of the ricotta cheese mixture. Top with a third of mozzarella cheese. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese.
· Cover with foil: to prevent sticking, either spray foil with cooking spray or make sure the foil does not touch the cheese.
· Bake in the preheated oven for 25 minutes. Remove foil, and bake for an additional 25 minutes. Cool for 15 minutes before serving.
