How To make Light Swiss Enchiladas
12 Corn Tortillas
1 Medium onion, chopped
1 Clove garlic, pressed/minced
1/2 lb Lean ground chicken
16 oz Can, tomato puree
1/4 c Canned whole green chiles
1/2 ts Salt
2 1/2 c Defatted, chicken stock
2 c Dry instant non-fat milk
1/2 lb Low fat Swiss cheese grated
1 Fresh cilantro garnish
Servings: 4 Can use fat-reduced Swiss or Jack cheese, grated, 2 cups. Omit salt if stock is salted. Preheat oven to 350 degrees. Wrap tortillas tightly in foil and place in preheated oven for 15 minutes to soften. While tortillas are warming, cook onion an dgarlic, covered, over low heat until soft, adding a little water or stock if necessary to prevent scorching. Add chicken and cook over medium heat, stiffing frequently until chicken is cooked, about 5 minutes. Add tomato puree, chilies and salt and mix well. Simmer, uncovered for 10 minutes. While chicken mixture is simmering, combine stock and dry milk powder in saucepan and mix thoroughly. Slowly heat to simmer, stirring frequently. Dip each tortilla in milk sauce. Divide chicken filling, spooning 1/4 cup mixture down the center of each tortilla. Roll each tortilla around filling and place, seam side down, in glass baking dish that has been sprayed with non-stick vegetable coating. Pour milk sauce over top and bake in 350 degree oven for 20 minutes. Remove from oven and sprinkle grated cheese evenly over top. Return to oven for another 5 minutes until cheese is melted. To serve, place each enchilada on a plate and garnish with fresh cilantro if desired. This recipe may also be made in individual au gratin dishes. We call these enchiladas Suizas, because the melted cheese on top reminds us the Suzie Alps with the white snow on top. You are going to love these enchiladas!
INGREDIENTS:
3 boneless chicken thighs cooked and shredded.
2 bags of Sargento 4 cheese Mexican.
16 blue corn tortillas.
4 poblano peppers roasted, peeled and without stem.
1 big white onion, half roasted and half cut in half moons.
4 choconostles roasted and peeled.
1 cup of Mexican cream.
1.5 pounds of pealed and roasted tomatillo.
8 garlic cloves, 6 roasted and 2 chopped.
The kernels of one corn.
One cactus life clean and cut in cubes.
One zucchini cut in cubes.
2 cups of chicken broth.
Chicken broth powder.
2 table spoons of coconut oil.
2 cups of fresh cleaned cilantro.

Ingredients:
12 Red Dried Chiles
5 Large Garlic Cloves
1/2 Teaspoon Salt
1/4 Teaspoon Cumin
15 Corn Tortillas
4 Cups Muenster Cheese, Shredded
* Makes about 5 servings. (3 Enchiladas each.)
Directions:
1. Boil the chiles in enough water to cover them until they are puffed and soft. Remove them from heat. Remove the stems from each chile and transfer them to a blender. Add about 1/2 cup of the water used to boil the chiles to the blender. Add garlic, salt, and ground cumin. Blend until smooth. Add more water or salt to taste if necessary. (Chile consistency should be like a light puree, not too thick.)
2. Spray a 9x13 inch baking dish with cooking spray. Transfer chile to a pot or flat bowl. Warm the tortillas just until softened.
3. Dip each tortilla in the chile so that both sides are completely covered. Place the tortilla on the baking dish and fill it with cheese. Wrap the tortilla over itself, closing it. Repeat with the rest of the tortillas and align the enchiladas side by side in the baking dish.
4. Sprinkle the left over cheese on top of the enchiladas. Cover dish with aluminum foil. Bake at 325F for 20-30 minutes.
5. Remove from heat and let stand 5 minutes before serving.

Let me tell you these are seriously super delicious that everyone in your family will enjoy, the sauce is so creamy of course you can control the spice level by adding more or less chiles, the amount i added was perfect, my kids enjoyed it!!!

1 1/2 tsp smoked paprika

????Easy Mexican Appetizers -
Bake at 375 degrees (F) for 15 minutes or until cheese has melted
Chicken & Broth
2 chicken breast
4 cups water
1/4 onion
2 garlic cloves
1 bay leaf
1 tsp salt
1/2 tsp thyme
*save 2 cups of broth, onion, and garlic for enchilada sauce ☺️
Enchiladas Zuidas
12 count tortillas
8 to 10 tomatillos
1 Jalapeños (for spice add Serranos)
1/2 bunch cilantro
15oz Mexican cream (or heavy whipping cream, half & half)
3 cups Manchego cheese (or Munster, mozzarella, chihuahua)
1 Tbsp toasted sesame seeds
1 tsp salt
Dash of nutmeg
Use extra sauce for plating!
Tips & suggestions ❣️
Do not add sauce at the bottom of the baking dish, to prevent a soggy enchilada, add the warm sauce at the bottom instead
If you have a little sauce left, add 1/2 cup of chicken broth 2 Tbsp of cream, and keep warm as you bake the enchiladas
