190g | 1cup green lentils
1 onion
1 carrot
1 garlic clove
170g | 1 cup cooked rice
1tsp ground coriander
1tsp Italian herbs
salt
???? Sauce ingredients:
1tbsp tomato puree
1tsp sugar
1tsp flour
salt & black pepper to taste
250ml | 1cup water
????????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
???? Method:
Soak 190g | 1 cup green lentils in water for 3 hours.
Add drained lentils to a bowl.
Mash with hand blender.
Chop 1 onion.
Transfer chopped onion into a lightly oiled frying pan.
Peel and grate 1 carrot.
Add to the onion and cook about 5 minutes.
Chop 1 garlic glove.
Combine well.
Add 170g | 1 cup cooked rice to the mashed lentils.
Add cooked carrot and garlic mixture.
Season with 1tsp ground coriander, 1tsp Italian herbs, salt to taste.
Mix until combined and transfer to the fridge for 10 minutes.
Shape into small balls.
Heat a little olive oil in a non stick skillet.
Fry the lentil meatballs for about 5 minutes on each side, or until golden and crispy.
In a mixing jar combine 1tbsp tomato puree, 1tsp sugar (optional), 1tsp flour, a pinch salt and black pepper to taste, 250ml | 1 cup water.
Pour the sauce and cook lentil meatballs under the lid for about 20 minutes.

Sopa de Lentejas- Mexican lentil soup with lentils, potato, and cilantro.
Mexican Lentil Soup is a simple soup of lentils, potatoes, and cilantro.

Ingredients
1 Cup Dried Lentils Washed well
4 Cups Chicken Broth or Vegetable Stock for Vegan
2 Roma Tomatoes Halved
1 Cup Water
1/2 White Onion Cut into quarters
1 Garlic Clove
1 Large Russet Potato, Peeled and Diced to even small chunks
Handful of cilantro with stems (the whole piece of cilantro).
Salt and Pepper to taste
Instructions
Rinse dried lentils well and place in a medium pot with a lid and 4 cups of chicken or vegetable broth. Bring to a boil and reduce heat to medium for a gently simmer.
While lentils are cooking place Tomatoes, Onion, Garlic, and water or broth in a blender. Blend till smooth.
After 10 minutes of the lentils simmering, add the pureed tomato sauce, the diced potatoes, and cilantro. Bring the heat back to a gentle boil, cover and cook for an additional 15 minutes. Check the lentils, once they are soft the soup is done.
You can remove the cooked cilantro stems if you like, but I leave them in.
Serve the lentil soup with more cilantro on top, and a few squeezes of lime.

lentils are one of the best types of legumes. packed with iron and protein they should be a part of everyone's diet. in colombia, we looooveeee arroz con lentejas (rice with lentils) as lunch. im pretty sure most colombian families eat arroz con lentejas at least once a week. it is one of those meals that are always good no matter how many times you eat it.
in colombia, it is accustomed to add some kind of cured meat to your lentils. typically it is colombian chorizo although hot dogs are also a popular addition. for this recipe, i chose to use hot dogs, except these are vegan hot dogs. they add a very nice smokiness to these lentils that you are go to love. not only that, what else is better than potatoes in stews/soups. these vegan lentils come together in less than thirty minutes and are super easy to put together for a quick make ahead lunch or weekday dinner. i hope you love them :]
ingredients:
- 1/2 cup of lentils
- 2 cups of water
- 1 potato, cubed
- 1 small carrot, finely diced ~ 1/2 cup
- 1 hot dog sliced into half coins
- 1/2 small onion, finely diced
- 2 small tomatoes, finely diced ( i used roma tomatoes ~ 1 cup of tomato)
- 2 garlic cloves, minced
- 1 tsp of vegetable bouillon
- 1/4 tsp of cumin

1/2 pound of lentils
6 bacon strips
2 tomatoes
1/4 onion
2 garlic cloves (minced)
1 jalapeño
1/2 bunch of cilantro
salt or chicken bouillon (to taste)
