How To make Leftover Turkey: Pumpkin Bean Turkey Chili
1 tsp olive oil
1/2 c onions
chopped
2 cloves garlic :
minced
1 c bell peppers chopped
1 1/2 tsps oregano
1 1/2 tsps cumin
1 1/2 tsps chili powder
1 tsp salt
1/2 tsp black pepper
14 1/2 ozs chicken broth
15 1/2 ozs great northern beans :
drained and washed
16 ozs dark red kidney beans drained and washed
14 1/2 ozs crushed tomatoes :
undrained
16 ozs pumpkin
2 1/2 c turkey light meat, skinless -- cooked and cubed
1/2 c water
Heat oil in a saucepan over medium heat. Add onions, garlic, bell peppers, oregano, cumin, chili powder, salt, and black pepper; cook until vegetables are tender. Stir in chicken broth, beans, tomatoes, pumpkin, turkey, and water. Bring to a boil, stirring occasionally. Simmer 45 minutes over low heat.

WELCOME TO THE DUDE FOOD CAFE! The special of the day is, Pumpkin and White Bean Turkey Chili! Who doesn't like a steamy hot bowl of food to keep them warm as the weather gets COLDER! All you need now is your SNUGGIE (and a hot chick?) and you're GOOD TO GO!
This is probably the easiest recipe you dudes will EVER make too! You just cook the turkey, add the rest of the ingredient and let it simmer for as little or as long as you'd like! So easy a DUDE CAN DO IT! ha ha! Okay, we need to give you dudes more credit!
While you dudes might gravitate towards corn-fed meat filled chili that uses processed refried beans, this recipe calls for far healthier yet just as tasty, if not tastier ingredients! Check out what's needed:
Ingredients:
- cooking spray (I used my Misto)
- 2 lb 99% lean ground turkey
- 1/2 tsp olive oil
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 tsp chili powder, to taste
- 2 bay leaves
- 2 tsp cumin
- 1 tsp oregano
- 2 (15 oz cans) white northern or navy beans (I prefer Goya) rinsed and drained
- 15 oz can pumpkin puree (not pumpkin pie filling)
- 4.5 oz canned chopped green chile
- 2 cups low sodium, fat free chicken broth
- chopped cilantro and chives for topping
- salt and pepper to taste
- low fat sour cream for topping (optional)
Can you say, GET IN MY MOUTH NOW! Exactly, this recipe is awesome! The pumpkin addition makes it quite festive too! It also thickens the stew and gives it a little je ne sais quoi! You'll love it! Whitney and I certainly did! So much so that we ate THE ENTIRE RECIPE WHEN WE FILMED THIS VIDEO!! Do you dudes like girls who can EAT? Well then you dudes will LOVE US!
You can make this recipe for your friends when they come over to watch the game, for a classier sit down dinner party or make it for a romantic evening with your sweet someone! Did you know that beans are an aphrodisiac? Ha! Just kidding... It'd be kind of ironic if they were, wouldn't it?
Honestly though, you cannot go wrong with this recipe! If you don't like beans, don't use them! If you don't like turkey, well then use chicken, or just ditch it and use more beans! If you don't like pumpkin, well then use butternut squash! The possibilities are ENDLESS!
Also, if you're planning on cooking an elaborate FEAST this holiday season and you know you're going to have turkey and sweet potato left overs, you can make this CHILI with those ingredients! You will NOT have leftovers for very long at all!

Here is yet another leftover recipe idea, with this holiday dinner I'm sure everyone had some so let's get started
ingredients: serves about 4
1-2 tbsp olive oil
1/4 cup chopped onion
1/4 tsp garlic powder
1/4 tsp ground cumin
1/4 tsp black pepper
1/4 tsp red pepper flakes
1 cube chicken bouillon
1/4 tsp crushed dried oregano
3-4 cups water
1/2 small can of green chilies
2 cups cannellini beans
2 cups cubed cooked turkey
1/3 cup green enchilada sauce
toppings optional: sour cream, shredded cheese, chopped spinach
