How To make Turkey, Bean, & Rice Skillet
1/2 tsp olive oil
1 lb turkey light meat, skinless
cooked
1/2 c onions :
chopped
1/2 c bell peppers chopped
1/2 c celery :
sliced
14 1/2 ozs crushed tomatoes
15 ozs dark red kidney beans -- undrained
8 ozs no-salt-added tomato sauce
1/4 c water
2 tsps chili powder
1 c long-grain rice
1 tsp salt
3/4 c low-fat Monterey Jack cheese -- grated
In a skillet, heat oil over medium heat. Add turkey, onions, bell peppers, and celery. Cook until turkey is done and vegetables are tender. Stir in crushed tomatoes, kidney beans, tomato sauce, water, chili powder, and salt. Bring to a boil. Stir in rice. Cover and reduce heat. Simmer, stirring occasionally, 10 minutes or until rice is done. Sprinkle cheese on top.

MEXICAN SKILLET RECIPE
1 tablespoon olive oil
1/2 large red onion, chopped
3 cloves garlic, chopped
1 pound grass fed ground beef
3 tablespoons taco seasoning
2 bell peppers, chopped
4 cups riced cauliflower
3/4 cup corn (fresh or frozen)
1 can fire roasted diced tomatoes
1 cup low sodium chicken broth
1 cup shredded cheese (I like cheddar and jack)
Heat your olive oil in a large non-stick skillet. Once the oil is hot, add in the onions and garlic along with a pinch of salt. Cook for 4-5 minutes or until the onions are translucent and fragrant.
Push the veggies to one side of the pan and add ground beef to the pan and sprinkle in taco seasoning along with a bit more salt and pepper. Break the meat up with a wooden spatula until you have small crumbles (be sure that all of the seasoning is evenly distributed as well).
Once the meat has browned add in riced cauliflower, belle peppers, tomatoes and chicken broth. Season with some more salt and pepper and mix well.
Pop a lid on and simmer for about ten minutes or until your cauliflower and peppers are tender.
Finish by adding in the corn and sprinkling the cheese over the top. Pop on a lid for two more minutes or until the cheese has melted down.
Serve and enjoy!

Sweet Potato Turkey Skillets | Easy Meal Prep Recipe

INGREDIENTS
6 (1500 g) sweet potatoes
4 lbs (1816 g) ground turkey (93/7)
1 (200 g) sweet onion
4 (500 g) poblano peppers green peppers work fine
2 Tbsp (30 g) garlic minced
2 Tbsp (16 g) cumin
2 Tbsp (16 g) chili powder
2 Tbsp (30 ml) olive oil
10 Tbsp (40 g) green onions
1 cup (112 g) shredded cheese
2.5 cup (600 g) salsa
Salt and pepper to taste
INSTRUCTIONS
1. Wash and cut your sweet potatoes into a large dice.
2. Start a large pot of water over high heat and bring to a boil. Add in the sweet potatoes and boil until they are easily pierced by a fork. Drain the water once they have finished cooking.
3. Wash your peppers and cut the pepper and onion into a small dice.
4. Add 1 Tbsp of olive oil to a skillet over medium high heat and brown the turkey.
5. Add 1 Tbsp of olive oil to a skillet over medium high heatAdd the onion, peppers, and 2 Tbsp of minced garlic to the skillet. Cook until the peppers have softened.
6. Mix in 2 Tbsp chili powder, 2 Tbsp cumin and salt and pepper to taste.
Add in the sweet potatoes and mix.
7. Store the salsa in a smaller separate container.
PLATING
8. This recipe makes 10 servings. Divide the meat and potato mixture evenly into each of your containers. Top each dish with shredded cheese, 1 Tbsp of green onions, and ¼ cup salsa.

Mexican Beef and Rice Skillet
Ingredients
1.5 pounds of beef
9 oz beef chorizo
2 cups rice long grain white rice
4 cups chicken broth
Half onion and bell pepper diced
2-3 garlic cloves minced

10 oz can of Enchilada sauce
1 can of corn drained
1 can of black beans drained
Cheese and cilantro to garnish the top
Taco Seasoning Blend or you can use store bought
Cumin 1-2 tablespoons
Smoked paprika 1 tablespoons
Chili powder 2 tablespoons
Salt
Pepper
Season and taste to adjust
Directions
Add in ground beef and the beef chorizo onions bell peppers and garlic. Season up with taco seasoning cook until meat is brown. Drain the beef add in remaining ingredients except the cheese and cilantro cook until rice is done about 18-22 mins stirring every few minutes throughout the cooking process
