How To make Turkey, Bean, & Rice Skillet
1/2 tsp olive oil
1 lb turkey light meat, skinless
cooked
1/2 c onions :
chopped
1/2 c bell peppers chopped
1/2 c celery :
sliced
14 1/2 ozs crushed tomatoes
15 ozs dark red kidney beans -- undrained
8 ozs no-salt-added tomato sauce
1/4 c water
2 tsps chili powder
1 c long-grain rice
1 tsp salt
3/4 c low-fat Monterey Jack cheese -- grated
In a skillet, heat oil over medium heat. Add turkey, onions, bell peppers, and celery. Cook until turkey is done and vegetables are tender. Stir in crushed tomatoes, kidney beans, tomato sauce, water, chili powder, and salt. Bring to a boil. Stir in rice. Cover and reduce heat. Simmer, stirring occasionally, 10 minutes or until rice is done. Sprinkle cheese on top.

2. 1 - BAG - SANTE FE BLEND - CORN, BLACK BEANS, RED PEPPER, GREEN PEPPER, DICED ONIONS ( DOLLAR TREE )
3. 1 - BAG - PEPPER STIR FRY - YELLOW ONION, RED, YELLOW, GREEN PEPPERS ( DOLLAR TREE )
4. 1 CAN OF BLACK BEANS - ( OPTIONAL )
5. 1 - 8 OZ BAG OF GREAT VALUE TACO BLEND CHEESE ( WALMART )
6. 2 - CUPS OF LONG GRAIN RICE
7. MINCED ONION - 1 TO 2 TEASPOONS
8. 1 - CAN OF ROTEL ORIGINAL DICED TOMATOES & GREEN CHILIES
9. OLIVE OIL - AS NEEDED
10. BADIA TACO SEASONING - AS NEEDED - OPTIONAL ( THIS SEASONING CAN BE USED AS A SUBSTITUTE FOR THE TACO BELL SEASONING )
11. BADIA CHILE & LIME. -1 TO 2 TEASPOONS ( A SLICE OF FRESH LIME & CHILI POWDER OR CRUSHED RED PEPPER FLAKES CAN SUBSTITUTE. )
12. BADIA KETCHUP SEASONING - 1 - 2 TEASPOONS ( 2 TEASPOONS OF TOMATO PASTE CAN SUBSTITUTE )
13. GREEN ONIONS OR SCALLIONS - 1/2 TO 1 CUP
14. TACO BELL SEASONING MIX - 1/2 PACKET OR LESS ( THIS SEASONING IS SALTY )
15. TACO BELL MILD SAUCE - OPTIONAL
16. OLD EL PASO - SOFT TORTILLA BOWL ( TACO SHELLS CAN ALSO BE USED )
17. DICED TOMATO , SOUR CREAM, SHREDDED LETTUCE
COOKING INSTRUCTIONS
PREPARING THE ONIONS & TOMATO
1. RINSE THE ONION & TOMATO
2. CUT THE ONIONS & TOMATO INTO SMALL PIECES . SET ASIDE
PREPARING THE TURKEY
1. USING A LARGE SKILLET ON MEDIUM HEAT. ADD 2 - 3 TEASPOONS OF OLIVE OIL TO THE BOTTOM OF THE SKILLET. ( ENOUGH TO COVER THE BOTTOM OF THE SKILLET )
2. ADD THE GROUND TURKY & BREAKDOWN INTO SMALLER PIECES . COOK FOR 4 TO 6 MINUTES
3. ADD THE PEPPER STIR FRY , BEANS & PEPPERS, 1 -2 TEASPOONS OF THE MINCED GARLIC , THE DICED TOMATOES, GREEN ONION
4. ADD 1 TO 2 TEASPOONS OF THE KETCHUP SEASONING ( SUBSTITUTE W/ - 1/2 CAN OF TOMATO PASTE
5. ADD 1 TO 2 TEASPOONS OF THE CHILI & LIME SEASONING ( SUBSTITUTE W/ - A SLICE OF FRESH LIME SQUEEZED & 1 TO 2 TEASPOONS OF CRUSHED RED PEPPER FLAKES OR CHILI POWDER )
6. ADD 1/2 PACKET OR LESS OF THE TACO SEASONING ** THIS SEASONING CONTAINS A LOT OF SALT. START WITH A LITTLE & ADJUST LATER **
7. MIX ALL THE INGREDIENTS UNTIL WELL BLENDED. TASTE & ADJUST YOUR SEASONINGS IF NEEDED.
ADDING THE RICE
*** I DID NOT RINSE THE RICE FOR THIS RECIPE ***
1. ADD - 2 CUPS OF THE LONG GRAIN RICE TO THE SKILLET - MIX UNTIL WELL BLENDED
2. ADD 1 1/2 TO 1 3/4 OF WATER TO THE SKILLET & STIR
3. TURN THE HEAT UP TO HIGH . WHEN THE LIQUID BEGINS TO BOIL. IMMEDIATELY TURN THE HEAT DOWN TO LOW. PLACE A PIECE OF FOIL OVER THE SKILLET. THEN PLACE THE SKILLET TOP OVER THE FOIL.
4. COOK FOR 20 TO 25 MINUTES.
5. CHECK AFTER 20 MINUTES. IF DONE TURN THE HEAT OFF & FLAKE THE RICE WITH A FORK
ADDING THE CHEESE
1. ADD THE TACO CHEESE OVER THE TURKEY & RICE VEGGIE MEAL
2. COVER THE SKILLET WITH THE TOP. ALLOW THE CHEESE TO MELT FOR 3 TO 5 MINUTES
** OPTIONAL PRESENTATION **
1. FILL THE BOTTOM OF THE TACO BOWL WITH THE TURKEY MIXTURE
2. ADD THE SHREDDED LETTUCE, THE TOMATOES , SOUR CREAM , TACO CHEESE , GREEN ONION
3. TOP WITH THE TACO BELL SAUCE
