How To Make Persian Kabab Tabei (Pan Kebab)
1 brown onion, grated, juice removed
1 tsp salt
1/2 tsp black pepper
1 tsp sumac
1 tsp saffron water
1 tsp turmeric
500g beef mince (lamb mince can be used)

For the kebap,
250 g ground beef, (rib) single ground (alternatively, lamb meat or a mixture of 60% beef & 40% lamb)
1 red hot chili pepper, finely chopped (soak in hot water if using dried pepper)
1/3 red pepper, finely chopped (bell peppers works great as well)
4 small green peppers, finely chopped
2 cloves of garlic, finely chopped
1 tablespoon red pepper flakes
1 teaspoon salt
Lavaş (or tortillas)
For the red onions with sumac,
2 red onions, sliced into semicircles
7-8 sprigs of parsley, chopped
A pinch of salt
2 tablespoons olive oil
1,5 tablespoons ground sumac
• Soak 4 wooden skewers in water for an hour to prevent burning. You can skip that step if you using metal skewers.
• Mix the red hot chili pepper, red pepper, green peppers and the garlic and chop them together again.
• Season with salt and red pepper flakes -if using sweet peppers-.
• Add the meat and chop them together to mix for 2 minutes.
• Divide the mixture into 4 equal parts.
• Mold each part onto separate skewers. Slowly push the meat mixture from top to the bottom with your fingers. Leave 3 cm gaps from the top and the bottom of the skewer. If the meat mixture seperate from the skewer, refrigerate it for around 15 minutes. Wetting your hands with cold water will help preventing stickiness.
• Refrigerate for 15 minutes.
• These are traditionally cooked on the barbecue, but I have a technique for you to create the same great taste at home using a cast iron pan. Heat your cast iron pan on high heat.
• When the pan is hot, place your skewers on the sides of the pan without touching any part touching the bottom. This way, the heat from the pan will cook them.
• Flip the skewers regularly and cook for 5-6 minutes.
• For the onion with sumac, sprinkle a pinch of salt on the onions and rub it to soften.
• Add in the olive oil, ground sumac, parsley, the rest of the salt, then mix again.
• Put the lavaş on the kebap and press to let the bread soak all the flavours from the kebap.
• It is time to eat! Wrap them all together in the lavash and take the perfect bite. Enjoy with your loved ones!

Persian Pan Kebab | Kabab Tabei | Kabab Tabehee | کباب تابه ای و کته قالبی (خانم گل آور) | خانم گلاور
Ingredients
Kebab:
1 medium onion, grated
1 pound ground beef, or lamb
1 teaspoon salt
1/2 teaspoon black pepper, ground
1/2 teaspoon turmeric, ground
4 tablespoons olive oil, adjust as needed
Potatoes:
4 tablespoons olive oil, more as needed
2 medium Yukon Gold potatoes, peeled and sliced 1/4 inch thick
1/4 teaspoon salt
Tomatoes:
4 tablespoons olive oil
4 ripe tomatoes, sliced
1/4 teaspoon salt
Instructions
Kebab:
In a large mixing bowl, combine all the ingredients for the kebab with the exception of the olive oil. Mix fully and form into desired patty shapes. I have chosen an oval shaped patty about 3 inches long and 1/2 inch thick.
In a large frying pan, heat the oil over medium high heat and place the patties in the pan, in a single layer. Fry the patties for about 5 minutes on each side. Remove from the heat and set aside.
Potatoes:
In a large frying pan, heat the oil and fry the potatoes over medium heat for about 8 minutes on each side or until the potatoes are fully cooked and golden. Sprinkle with salt, remove from the pan and arrange on top of the kebabs.
Tomatoes:
In the same frying pan, heat the oil and fry the tomatoes on medium high heat for about 2-3 minutes on each side. Sprinkle with salt, carefully remove from the pan, and place on top of the kebabs and potatoes.
Assembly:
Once the potatoes and tomatoes have been placed on the kebabs, cover the pan and cook for about 5 minutes over low heat to reheat and bring the dish together.
Serve with Persian steamed basmati rice or Persian flat breads, sumac, raw onions and a platter of fresh herbs.

مواد لازم
گوشت چرخکرده 300 گرم
پیاز متوسط 1 عدد
نمک و فلفل به مقدار کافی
زردچوبه 1/2 قاشق چایخوری
گوجه 2 عدد
رب گوجه فرنگی 2 قاشق غذاخوری
روغن برای کف تابه به مقدار کافی
جعفری تازه دلخواه
طرز تهیه کباب تابه ای
ابتدا گوشت چرخکرده را در کاسه ی بزرگی قرار دهید (اگر گوشت یخ زده است بگذارید در دمای اتاق نرم شود). پیاز را به صورت ریز رنده کنید و همراه با نمک، فلفل و زردچوبه به گوشت اضافه نمایید. خوب ورز بدهید تا گوشت با مواد دیگر مخلوط شده و طعم دار شود.
مقداری روغن در ماهیتابه بریزید و ان را کف تابه به خوبی پخش کنید. سپس مخلوط گوشت را در تابه بریزید و با دست به صورت لایه نازک و یکنواختی کف تابه پهن کنید.
بگذارید گوشت حدود 1 ربع ساعت روی شعله متوسط بماند، سپس با کفگیر مناسب روی گوشت خطوط موازی بیاندازید. با فشار کفگیر گوشت را روی خطوط ایجاد شده برش بزنید. تا زمان آماده شدن سس شعله را کم کنید.
برای تهیه سس، گوجه را خرد یا رنده کنید و با رب گوجه، کمی نمک و فلفل مخلوط نمایید. سس را چند دقیقه روی حرارت بگذارید تا آب گوجه قدری بخار و سس کمی غلیظ شود.
تکه های گوشت را برگردانید تا طرف دیگر آنها کف تابه قرار بگیرد. سپس سس را روی آنها بریزید و بگذارید حدود 5 دقیقه در سس پخته شوند.
وقتی کباب تابه ای آماده شد روی آن جعفری تازه خرد شده بریزید و آن را همراه با پلو سرو کنید.
نکته ها:
1- حتماً آب پیاز را بعد از رنده کردن جدا کنید.
2- جمع شدن بیش از حد کباب دیگی موقع پخت نشاندهنده چربی زیاد گوشت شماست. پس مقدار چربی را کم کنید و ترجیحاً از نسبت برابر گوشت گوسفندی و گوساله استفاده کنید.
3- یک روش دیگر تهیه کباب تابه ای این است که گوشت را مثل کتلت تکه تکه در تابه بگذارید.
4- برای تهیه کباب تابه ای با سیب زمینی میتوانید کباب را با سیب زمینی سرخ کرده سرو کنید یا سیب زمینی را هم در سس گوجه با مقداری آب بپزید و بعد به کباب اضافه کنید.
