How To make Jelly Cookies
4 c All-purpose flour
1 c Butter; (2 sticks)
2 Eggs
1/2 c Granulated sugar
2 1/2 c Jelly (about) such as
-seedless red Raspberry; see note Powdered sugar Recipe by: St. Louis Post-Dispatch 12/2/96 Combine flour, butter, eggs and sugar; beat until well mixed. Cover and refrigerate overnight. Preheat oven to 350 degrees. Roll out chilled dough on lightly floured surface until about 1/4-inch thick. Cut with a round cookie cutter; transfer cookies to an ungreased cookie sheet. Bake for 10 to 12 minutes, until very lightly browned. Let cool on wire rack. When cool, spread jelly between 2 cookies to make a sandwich. Coat each cookie in powdered sugar. Cookies taste better after a few days because the jelly absorbs into the cookie and makes them softer. Tester's note: Pretty sandwich cookie. This recipe tastes best with a slightly tart jelly. Thumbprint Cookies | Preppy Kitchen
Thumbprint cookies are the original no stress ready in a snap cookie. The bright colored jam filling reminds me of Autumn leaves and Christmas ornaments. I made these with a drizzle glaze but you can use chocolate, nuts or coconut flakes just as easily. Let me know which one you prefer!
I love that these cookies can be made with little ones, as long as they have extra clean hands! Some people will use a teaspoon to press the indent into the cookie but I think it's called a thumbprint cookie for a reason. The recipe for the sugar cookie base is super versatile by the way, also great for cut out cookies!

Peanut Butter & Jelly Cookies | The Cooking Show
Inspired by simple ingredients in her kitchen cupboard, Farideh is at home making cookies stuffed with crunchy peanut butter and strawberry jelly. Farideh rolls out and freezes balls of peanut butter and places them on portions of cookie dough, then tops them off with a scoop of jelly. Whether eaten hot from the oven or cooled, these cookies are the next evolution of the classic PBJ sandwich.

/ INGREDIENTS & METHODS /

18~21 cookies
110g(1/2cup) unsalted butter, softened 실온의 무염버터
60g(1/4cup plus 2Tbsp) icing sugar 슈가파우더
1 egg yolk 계란 노른자
5g(1tsp) vanilla extract 바닐라 익스트랙
pinch(한꼬집) salt 소금
150g(1cup plus 1Tbsp) cake flour 박력분
apricot jam 살구잼
strawberry jam 딸기잼
1. 오븐을 섭씨 160도(화씨 320도)로 예열한다. 짤주머니에 잼을 넣어 준비해줍니다.
2. 볼에 무염버터와 슈가파우더를 함께 넣어 섞어준다. 계란 노른자, 바닐라 익스트랙, 소금을 함께 넣고 섞어준다. 마지막으로 체친 박력분을 넣고 함께 섞어준다.
3. 완성된 반죽을 1/2~1큰술 가량으로 나누어 공모양으로 둥글게 만든다. 손바닥을 이용해 윗면을 평평하게 만들어 주고, 손가락 혹은 기타 커틀러리로 하트모양을 만든다. 하트모양 안에 잼을 채워넣는다.
4. 섭씨 160도(화씨 320도)로 예열한 오븐에서 14~16분 간 구워 완성한다.
1. Preheat the oven to 160 degrees Celsius (320 degrees Fahrenheit). Prepare jam by putting it in a piping bag.
2. Mix unsalted butter and icing sugar together in a bowl. Add egg yolk, vanilla extract, and salt together and mix. Finally, add sifted cake flour and mix together.
3. Divide the dough into 1/2~1 Tbsp and roll it into a ball shape. Use your palms to flatten the top, and use your fingers or other cutlery to make a heart shape. Fill the heart shape with jam.
4. Bake in an oven preheated to 160 degrees Celsius (320 degrees Fahrenheit) for 14 ~16 minutes.

Italian Cookies with Jam/ Pizzicati Cookies Recipe
This cookie melts in your mouth, with jam of your choice. Perfect for tea, coffee or any time.
Recipe:
• 3 sticks unsalted butter ( softened)
• 8 oz cream cheese ( softened)
• 1 cup sugar
• 1/4 tsp salt
• 2 eggs
• 1 tbsp baking powder
• lemon zest from the whole lemon
• lemon juice from the half lemon
• 5 flat cups all purpose flour, less or more, as needed
Knead the dough until it’s soft and not sticky
Wrap the dough in a plastic wrap and refrigerate for 20-30 minutes
Place the dough on a lightly floured surface and roll until the dough is approximately ⅛ thick. With a cookie cutter cut squares about 3”x3”, or you can cutout circles, using a tea cup
Place half a teaspoon of jam in the center of each square or circle
Bring the sides of the dough together as if to close square or circle, and pinch the ends gently but firmly together to secure them.
Place the cookies on a baking sheet covered with parchment paper. Bake them on 375f for about 17-20 minutes, depending on your oven.
Cookie should be very light brown
You make about 60 pieces cookie
Once completely cooled, sprinkle them with powdered sugar before serving.
Store the baked cookies in an airtight container or sealed jar. Keep them in a cool spot in your kitchen or in the fridge for up to 3-4 days. Longer they stay, more delicious they are ????
You can definitely freeze them in a ziplock bag up to two months
