How To make Peanut Butter & Jelly Cookies
1/4 c Butter or margarine;
-softened 1/4 c Shortening; softened
1/2 c Sugar
1/2 c Brown sugar; packed
1 Egg
1 1/4 c Flour
3/4 ts Baking soda
1/2 ts Baking powder
1/4 ts Salt
Favorite jelly or jam Mix mix butter or margarine, shortening, peanut butter, sugars and egg thoroughly. Blend in remaining ingredients except jelly. Cover & chill. Heat over to 375. Shape dough into 3/4 inch balls. (note: I make htem a bit smaller). Place about 2 inches apart on a lightly greased baking sheet. Bake about 10 minutes or until set but not hard. When cool, put cookies together in sandwhiches with the jelly. About 4 1/2 dozen. You can also shape the dough into 1 inch balls. Roll them in 1/2 cup finely chopped peanuts. Place about 3 inches apart on baking sheet & press thumb in center of each. Bake 10-12 min, and spoon a small amount of jelly or jam into each thumprint. 3-INGREDIENT PEANUT BUTTER COOKIES
Makes 25-30 cookies
INGREDIENTS
1 cup peanut butter
½ cup sugar
1 egg
PREPARATION
1. Preheat oven to 350ºF/180ºC.
2. In a large bowl, mix together the peanut butter, sugar, and egg.
3. Scoop out a spoonful of dough and roll it into a ball. Place the cookie balls onto a nonstick baking sheet.
4. For extra decoration and to make them cook more evenly, flatten the cookie balls by pressing a fork down on top of them, then press it down again at a 90º angle to make a criss-cross pattern.
5. Bake for 8-10 minutes or until the bottom of the cookies are golden brown.
6. Remove from baking sheet and cool.

115g Room Temperature Butter, unsalted
100g Caster / Granulated Sugar
55g Brown Sugar, packed light
225g Smooth Peanut Butter
1 Egg Room Temperature, large
Dash of Vanilla
16g Baking Powder
300g All-Purpose / Plain Flour
150g Jam, Jelly or Fruit Spread
Bake for 10 to 15 minutes in a per heated over 180c 350f, until golden brown.
Allow the cookies to cool on the tray for 5 minutes before moving to a wire rack to cool
