How To make Italian Zucchini Quiche
1 Large or 2 medium zucchini
1 Medium onion
chopped finely
1/2 C. margarine
1/2 C. parsley
1/2 Tsp. salt
1/2 Tsp. pepper
1/4 Tsp. garlic powder
1/4 Tsp. basil
1/4 Tsp. oregano
2 eggs :
beaten
8 Oz. shredded Mozzarella cheese
1 Pkg. Pillsbury crescent dinner rolls
Peel and slice zucchini thinly. Place in saucepan, cover and boil for 1/2 hour. Drain and set aside. In large frying pan, combine onion and margarine. Brown onion slightly. Stir in parsley, salt, pepper, garlic powder, basil and oregano. Stir well. Cook on medium heat 5 minutes. Remove from heat. In large bowl, mix eggs and cheese. Add zucchini mixture and parsley mixture. Stir well. Unroll crescent rolls, line 9-inch pie plate or quiche dish with dough. Pour zucchini mixture into pie plate. Bake 10 minutes uncovered then 10 more minutes covered with aluminum foil at 375 degrees. Turn off oven, but leave quiche in oven, 2 to 3 minutes.

This recipe can be adjusted according to the wishes of each of you. salt and others can be tested according to individual tastes. the number of Zucchini and onions adjusts to the number of people who will eat and the size of your pie crust.

1/2 cup ricotta cheese

1/4 cheddar cheese

note (let chill zucchini before adding to the sauce)
Bake 180° for 45 minutes

Making Zucchini Quiche is easier than you my think. Join me today, as we whip some up in my kitchen. I have been making this one for years, but I am always surprised how delicious it is.
Zucchini Quiche Recipe
Prepare Crust ( see my video for the perfect pie crust) or use store bought crust
Pierce bottom of crust with fork, and bake 450 F for 14 minutes or until golden
Ingredients:
Mix in one bowl
6 eggs
3/4 cup milk or cream
2 Tablespoons Worcestershire Sauce
In a Separate Bowl Toss the following to coat with flour
2 cups grated Zucchini
1 cup of grated cheese ( i used med. sharp cheddar
2 Tablespoons of all purpose flour
Garlic salt and pepper
1 Tablespoon Sweet Basil
Mix wet and dry ingredients together just until blended
Pour into prepared and pre-baked crust
Bake 425F for the first 15 minutes, then reduce heat to 350F and continue baking for 20 minutes or until a toothpick inserted comes out clean.

Dough:

a pinch of salt
Filling:
100g goat cheese (or cream cheese), in this recipe I have a goat cheese with figs
3 eggs
2 zucchinis
1 eggplant
1/2 tsp. salt
any spices you like
Bake at 170 degrees celsius for about 10-12 min., put a filling in and bake another 45-50 min.
