The BEST Pumpkin Cheesecake

Ingredients:
700g pumpkin (or butternut squash) flesh, cut into 2cm cubes
3 eggs, beaten
150g golden caster sugar
2½ tsp mixed spice
½ tsp flaky sea salt
340ml evaporated milk
½ tbsp icing sugar, for dusting
Sweet shortcrust pastry:
250g plain flour
125g unsalted butter, chilled and cubed
50g golden caster sugar

Pumpkin Pie Ice Cream W/ Bailey's Irish Cream!
My take on this holiday dessert favorite. I take Pumpkin Pie, Deconstruct it, and place it in a Vanilla Base with Crushed Graham Crackers.
How to Make Pumpkin Pie Ice Cream.
2 Cups Heavy Cream
1 Cup Whole Milk
1 Cup White Granulated Sugar
2 Egg Yolks
1/2 Cup Pumpkin Puree
1/4 Tsp Sea Salt
1/2 Tsp Ground Ginger
1/2 Tsp Cinnamon
1/8 Tsp Ground Cloves
1/2 Tsp Pure Vanilla Extract
8 Graham Crackers (crush to desired size)
3 Tblsp Bailey's Pumpkin Spice (Optional)
Mix all Ingredients into Pan
Heat Mixture on Stove to 185°F
Cool Mixture in Refrigerator for Min 1 hr
Take chilled mixture, add Bailey's and place in Ice Cream Machine, until desired consistency has been reached.
Place Immediately in freezer.
Making a Pumpkin Pie in 1796 IS HARD |No Talking Real Historic Recipes| Pumpkin Custard Pie
Recreating a custardy pumpkin pie from 1796 because why not? There was some trial and error with this one as, like usual with historical recipes, the instructions were vague but in the end it all came together! It was a fun experiment.

Crust-
8 oz (1 cup) butter, softened

Filling-
6 eggs
3/4 cup each granulated sugar and packed brown sugar
15 oz can pumpkin puree
1 cup maple syrup
1/2 cup light corn syrup
1/2 Tablespoon pumpkin spice
3 cups pecan halves
Bake crust at 350⁰ for 30 mins or until golden, then top hot crust with filling and bake 45 mins longer, until set. Let cool to room temp in pan before cutting.

200 Year Old Pumpkin Pie Recipe! * Colonial Williamsburg Cookbook Vintage Recipe 1829
In the 1970's, Grandpa and I took a trip to Williamsburg, Virginia. We visited the historic Colonial Village and we picked up a cookbook that featured many old recipes. This is a vintage recipe for Pumpkin Pie that was dated from 1829. It probably goes back even further than that. It's very easy to make and it is delicious too.
