200 g Pork tenderloin ,finely shredded
4 tbsp. cooking oil
1/2 tbsp. vegetable oil
2 spring onions for serving
a cucumber
20 moo shu wrappers for serving
Marinade
1 tsp. salt
1 tbsp. light soy sauce
1 tsp white pepper
1 tsp sugar
1 tbsp Shaoxing rice wine
1 tbsp cornflour
1/2 tbsp vegetable oil
Sauce
3 tbsp hoisin sauce
1 tbsp Shaoxing rice wine
2 tsp vegetable oil
2 tbsp water

We are making a beautiful Pork Fillet Nasi Goreng, that serves four people. It is so easy to make when you folow this recipe from Russell Blaikie.

PORK IN COCONUT MILK, COCONUT PORK CURRY
Ingredients:
500 g pork neck
1 onion
1 tomato
3/4 cup water
200 ml coconut milk
1/2 teaspoon turmeric
3 dried chillies
1 clove of garlic
salt
Chettinad masala paste:
1 small onion
2 tbsp coconut shavings
2 teaspoons coriander seeds
1 1/2 teaspoon cumin seeds
1 star aniseed
3 cm cinnamon sticks
3 cloves
cardamom
4 peppercorns
1/2 teaspoon ginger powder
2 bay leaves
1/2 teaspoon chilli
3 tbsp Oil
3 tbsp water
In addition:
1 teaspoon coconut shavings
fresh coriander leaves
Add oil to a heated frying pan and add the onion cut into feathers, coconut shavings and fry, stirring constantly, until they turn brown.
Add the spices: coriander, cumin, cardamom, aniseed, cinnamon, cloves, pepper, ginger, bay leaves, chilli powder and fry over a low heat, stirring, until the spices start to smell.
Set the pans aside to cool.
When the roasted spices have cooled down, put them in the bowl of a mixer. Add a little water and grind everything to a smooth paste.
Heat the oil in a deep frying pan. Add finely chopped onion and fry. Add pressed garlic and after a minute add diced tomato, turmeric, chillies and stir.
Increase the heat and throw in the diced meat and fry it on all sides. In the meantime, salt to taste.
Add 3-5 tablespoons of chettinad paste, add water, stir and simmer for about 75 minutes, covered, stirring from time to time.
When the meat is tender, pour in the coconut milk and cook for 5 minutes.
Finally sprinkle with coconut shavings and coriander.
Serve with rice.
