Impossible Lemon Pie
Get the recipe here:
It’s not often that we completely forget about a yummy dessert, but this one had completely escaped our memory until recently, when someone brought it to a family gathering. One look at that creamy filling and perfectly crunchy crust and we knew we had to introduce you to (or remind you all of) Lemon Impossible Pie.
You might know it as something different, but this pie is basically magic, in that you make only one batter, but as it cooks it separates into two distinct layers: a filling that’s like a delectable lemon custard and a coconut top crust that’s crispy and offers the perfect contrast to the filling. This dessert is ridiculously easy (plus, clean-up is a breeze!) and we promise your whole family will love it…get the little ones to help out and watch them be amazed at the results!

00:35 Preparing the peaches
02:10 Preparing the batter
04:05 Adding the batter and peaches to the pan
05:48 Tasting the dessert
INGREDIENTS
- 4 tbsp unsalted butter melted
- 2 cups peeled and sliced peaches
- 3/4 cup all-purpose flour
- 1 cup white granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 2/3 cup milk
INSTRUCTIONS
Add the butter to a 9×9 baking dish. Set the baking dish in the oven and preheat the oven to 350°F. Once the butter is melted in the oven, remove the baking dish, 4-6 minutes. Set the baking dish aside while preparing the batter.
Mix the flour, sugar, baking powder, salt, and cinnamon in a bowl. Whisk to incorporate evenly. Add the milk and whisk until smooth.
Pour the batter into the baking dish with the melted butter. There is no need to stir. Add the sliced peaches directly on top of the batter.
Bake in the preheated oven until the cobbler is golden and set in the middle, 45-55 minutes. Once baked, remove from the oven and cool 15 minutes before serving.

Magic impossible custard pie
Magic Impossible Custard Pie ✨???? I’d rate this one a 7.5/10 but 9/10 when served with a scoop of vanilla ice cream and (leftover) berry compote.
Recipe by: @steph_cooks_stuff
Ingredients
1 cup/240g sugar
1 cup/80g desiccated coconut
1/2 cup/65g plain flour
1/2 cup/112g melted butter
4 eggs
2 cups/480ml milk
Zest of 1 lemon
1. Combine all the ingredients in a large bowl. Give it a good whisk until smooth and well-combined.
2. Pour the dreamy mixture into a lined pie dish.
3. Pop it into the oven and bake at 180C for a golden 50 minutes.
I didn’t have a round glass as pie dish available so used a 16cm W x 26cm L x 5cm D glass dish instead.
