How To make Impossible Bacon Pie
Ingredients

bacon, sliced, cooked, crumbled

cup
swiss cheese, shredded
1/3
cup
onion, chopped

milk

eggs

bisquick
1/8
teaspoon
pepper
Directions:
Preheat oven to 400. Grease 10x1 1/2 inch pie plate. Sprinkle ham, cheese and onion in pie plate. Beat remaining ingredients 15 seconds in blender on high speed. Pour into pie plate. Bake 35-40 min. or till knife comes out clean. Cool 5 min.
VARIATION: Substitute 2 c. fully cooked smoked ham for the bacon, cut up.
1/2 RECIPE: Use 1 qt square or round casserole. Decrease onion to 2 tb. Divide remaining ingredient amounts in half. Decrease beat time to 10 sec.
HIGH ALTITUDE: Bake about 45 min.
For 1/2 recipe: use 1 1/2 qt round or 1 qt square casserole. Bake 30-40 min.

Cooking with Steve Impossibly Easy Calico Corn and Bacon Pie
This week I decided to try a recipe from my Bisquick Cookbook. I went to the impossible pie section and selected the impossibly easy calico corn and bacon pie recipe. I have made impossible pies using Bisquick before (see Cooking with Steve: Impossible Cheeseburger Pie) and find these impossible recipes are very easy, leftovers warm up easy, and they are very delicious. What makes them impossible recipes is that you pour all the ingredients together in a pie plate, and when cooked, it forms into a pie with a “pie crust”. It is also very easy to make two pies instead of just one, just double the ingredients and you can cook both pies together. Enjoy!

Mini egg bacon pies: they are so quick and easy!
They cook in less time than a big pie as well! With a few ingredients, too good to not try them!INGREDIENTS
2 soft-boiled eggs;
1 egg;
45 g (1.5 oz) flour;
2/3 cup milk;
1/3 cup ham, minced;
8-10 slices bacon;
½ cup shredded cheese;
Scallions for garnish.
METHOD
Preheat oven to 190C/375F.
Brush two large ramekins with vegetable oil and place bacon slices, overlapping, to cover bottom and sides of the ramekin.
Add a layer of chopped ham and soft-boiled egg.
Whisk 1 raw egg with flour, milk and a pinch of salt. Pour over the egg and top with cheese and ore bacon. Repeat with another one ramekin.
Bake for 15 minutes and serve hot, topped with sliced scallions.

How to make Bacon and Egg Pie
A truly underrated dish is this here Bacon and Egg Pie which is a popular dish both warm and cold in New Zealand and is especially a great addition to a picnic.
Recipe by Roamingtaste
Serves 8
Ingredients:
3 large sheets pre-rolled puff pastry (320 grams/11.3 ounces)
1 small carrot, peeled and finely diced
2 scallions, ends removed and finely sliced
10 medium eggs
6 rashers bacon (80 grams/3 ounces), finely diced
Directions:
- Preheat the oven to 150°C/300F and lightly grease a baking dish with butter.
- Cut 1-2 pastry sheets to fit your baking dish, as necessary, and then press snuggly into the dish, allowing a 1/4 inch overhang on the edges.
- Prepare the pastry for the top portion, cutting to fit as necessary. Set aside.
- Crack 6 eggs into a bowl, add the scallions, carrots and bacon and lightly whisk to break the egg yolks, but not let too much air in.
- Crack 1 egg into your pastry base and then add approximately 1/4 of the whisked eggs and bacon into the pastry, repeat in the same manner slightly layering and scattering the 4 whole eggs with the bacon and broken egg mix.
- Allow at least 1/2 inch from the top of your baking dish as eggs expand when cooking.
- Carefully lay the top sheet of pastry over the eggs, carefully pinching the base and top pastry sheet edges together firmly.
- Once the edges are tightly held, press the edges down with the prongs of a fork to ensure it's nice and tight.
- With the residual egg from your bowl, brush the top of your pie evenly.
- Place in the preheated oven and bake for 25 minutes. Raise the heat to 180°C/350 and cook for a further 15 minutes or until golden.
- Slice and serve warm or cold.
