How To make Hungarian Noodle Side Dish
Ingredients

chicken bouillon cubes
1/4
cup
boiling water

each
cream of mushroom soup, can
1/2
cup
onion, chopped

tablespoon
worcestershire sauce
1
tablespoon
poppy seeds
1/4
teaspoon
garlic powder
1/4
teaspoon
hot pepper sauce
2
cup
cottage cheese
2
cup
sour cream
1
each
egg noodles, wide, 16 oz pkg, cooked, drained
1/4
cup
parmesan cheese, shredded
1
paprika
Directions:
Lightly grease crockpot. Cook noodles in boiling water for 5 to 7 minutes; drain. In a large bowl, dissolve bouillon in water. Add the next six ingredinets. Stir in cottage cheese, sour cream, and noodles. Transfer to crockpot. Sprinkle with parmesan cheese and paprika. Cover and cook on High 3 to 4 hours. Serve immediately.
Serves 8 to 10.

Nokedli Hungarian Noodle Dumplings

Greetings! I had some leftover chicken paprikash from Sunday's dinner. The perfect side dish to go along is Nokedli! Hungarian noodle dumplings that are similar to Spaetzle.
These are very easy to make with or without a noodle maker, you can just use a board and a knife! You probably have everything you need in your kitchen to whip these up, bread flour, eggs water and salt. You can make these in about the same time as it takes to make a pre made noodle and these are light and fluffy, delicious and addictive!
Nokedli are a happy memory of my childhood. These are best made and eaten fresh. If you have extra, you can freeze them after they are cooked. They are very delicate and do not recommend dehydrating them because they will lose their fluffiness and lovely texture.

How to make a Hungarian dish at home: Recipe for Túrós Tészta (Pasta with Cottage Cheese)
I was so excited to get a comment from Hungary! A woman named Agnes (hi, Agnes!) wrote to me suggested I try a Hungarian dish called Túrós Tészta, which she says translates to Pasta with Cottage Cheese.
I made the dish and was struck by 1. how easy and quick it was, 2. what fantastic comfort food it was, and 3. how much it reminded me of my trip to Hungary back in 2005!
Thanks to Agnes for sharing with me her recipe. Here's how you make it:
-pasta (wide, flat noodles)
-several slices of bacon, cut into small pieces
-combine 8-9 oz. cottage cheese
-3-4 tbsp sour cream
-1 clove of garlic, minced
-salt and pepper
Cook the pasta. Cook the bacon in a skillet until crispy. (Well, Agnes is a vegetarian so she doesn't add the bacon personally...but she says that's the traditional way of doing it...so I added it).
Meanwhile, combine the cottage cheese, sour cream, garlic, salt & pepper in a bowl to make the sauce.
When the pasta is done, add the noodles to the skillet with the bacon. Then take it off the heat and mix in the sauce.
