1. 200g / 1 cup dried chickpeas or 1 x 15oz jar/tin of cooked chickpeas
2. 125g / ½ cup of good quality white sesame tahini
3. 1 x Clove of garlic
4. Juice of 1 x lemon
5. 1 x teaspoon of cumin powder
6. Salt for seasoning
7. Olive oil for finishing
8. Nuts/seeds for garnish
9. Fresh parsley for garnish

1. 1 x Base of *Classic Hummus*
2. ½ to 1 x ripe avocado, based on size
3. 1 x Bunch of fresh dill fronds
4. 1 x Bunch of fresh parsley tips
5. Juice & zest of 1 x lime
6. Olive oil for finishing

For the Sundried Tomatoes & Basil Hummus
1. 1 x Base of *Classic Hummus*
2. 100g / 2 cups of sundried tomatoes
3. 1 x Bunch of fresh basil
4. Olive oil for finishing
5. Nuts/seeds for garnish
6. Fresh parsley leaves for garnish

Homemade Hummus
Ingredients:
30 oz Cooked Chick Peas
2-3 Garlic Cloves
2 Lemons
1/2 Cup Tahini
1/4 Cup Olive Oil
1 tsp Cumin
2-3 Tbsp Ice Water
Parsley (garnish)
Paprika (garnish)
Salt and Pepper
Instructions:
Rinse the chick peas and remove the skins.
In a food processor add the chick peas, garlic, tahini, olive oil, cumin, the juice of 1.5 lemons, a splash of ice water, salt and pepper. Purée until smooth adding a little more ice water if needed. Taste and adjust the seasoning to your liking.
Garnish with olive oil, paprika, and freshly chopped parsley. Serve with fresh veggies, crackers, or pita bread.
