How To make Hummus 3
2 c Dry chick peas
1 lb Jar tahini
3 Garlic cloves
1/4 c Soy sauce, natural (tamari)
1 Lemon
Onion Water from cooked beans 2 ts Cumin, powdered (optional)
Paprika for garnish Parsley for garnish Soak beans overnight. Drain and place on cookie sheet. Freeze several hours. cook frozen beans in double amount of water with onion in it or cook in a pressure cooker instead of freezing first. Blend cooked beans (pureeing while still warm makes blending easier) and onion a little at a time, using as much water as necessary to keep blender going. Add garlic cloves, soy sauce and lemon juice to taste along with beans. If you're using cumin, add it now. When all beans have been blended with other ingredients to a thick sauce, place in a large bowl. Add one jar of tahini and mix well, adding more tamari, garlic, or lemon juice if a stronger flavor is desired. (add more water for thinner consistency.) Place on a shallow dish, spread smoothly and sprinkle with paprika and parsley. Serve with pita strips, use as a sandwich spread, or stuff into celery. VARIATIONS: a) Avocado Hoomus: mash in 1 large ripe avocado b) Eggplant Hoomus: mash in one medium baked eggplant (no skin) and mix with cumin added to garbanzo tahini blend. //ara kent

Ingredients:
2 medium garlic cloves, roughly chopped
¼ cup lemon juice
¼ cup water
14 oz canned chickpeas, rinsed and drained
½ cup tahini
¼ cup olive oil
½ tsp ground cumin
1 tsp sea salt, or table salt, to taste
To serve:
5 oz bread of your choice, toasted, per serving
1 tbsp olive oil to drizzle
Pinch of paprika, roughly ¼ tsp

0:44 Process until smooth, scraping the sides occasionally.
0:57 Garnish with a drizzle of olive oil and paprika. Serve immediately with your chosen bread. It can last refrigerated and covered for up to 1 week and frozen for up to 3 months.

HUMMUS
Ingredients:
400 gr canned chickpeas (~14 oz, ~0.9 lb)
6 tablespoons tahini
1 lemon
6 cubes of ice
2 garlic cloves
2 tablespoons extra virgin olive oil
Half teaspoon salt
to garnish:
ground sumac
ground cumin
2-3 tablespoons extra virgin olive oil
Parsley
Directions:
- For a perfectly smooth hummus first you need to peel the chickpeas. Add 400 gr
canned chickpeas in a large bowl and rub to take the skin of.
- Fill the bowl with water and skins will start to float. When you drain, skins will group
on water and it will be much easier to collect.
- Add peeled chickpeas, 2 cloves of garlic, half of a teaspoon salt, 6 tablespoons of
tahini and 2 tablespoons of extra virgin olive oil to food processor.
- Squeeze a lemon juice and run for 7-8 minutes on low-medium speed.
- While the food processor is working the hummus will get warm. To avoid that add 6
cubes of ice gradually. ıce will help to make a smooth hummus as well.
- After a couple of minutes hummus will be ok but not smooth enough. Don’t give
up and continue until the hummus is creamy. You can run on high speed at this stage.
- Taste and adjust the lemon, tahini and salt to your taste. Garlic and olive oil always
need time to settle. If you have 2-3 hours before eating the taste will be better.
- When the hummus is ready put on serving table and make a little crater with the
back of a spoon.
- Sprinkle ground sumac, cumin and parsley leaves. Last but not least pour 2-3
tablespoons of extra virgin olive oil.
- Enjoy your creamy, tasty, simple hummus with your lavash or chips as your spoon!
