Sweet and Spicy Pork Ribs
*Ingredients*
brown sugar, green chili, honey, lemon, olive oil, pork ribs, red chili, soy sauce, thyme, white sugar, white wine
*Recipe*
Preheat the oven to 380 degrees F/190 degrees C.
Cut each chili into halves, lengthwise. Remove their seeds, then cut them into thin slices.
Cut the rack of ribs into pieces (2 ribs for each piece). Put the ribs in a bowl.
Add the white wine, soy sauce, olive oil, the chili slices, brown sugar, and 1 tablespoon of honey.
Add the lemon slices and mix everything with your fingers, so that the ribs absorb the marinade.
Lay the ribs in a ceramic baking tray, then pour the marinade over them.
Roast for 30 minutes.
Meanwhile, put about 1/2 cup (125 ml) of water into a small pan, on medium heat.
Add the white sugar and the remaining tablespoon of honey. Mix and let it simmer, to reduce the liquid and get a syrupy mixture.
Remove the ribs from the oven and spread sweet syrup on them, using a silicone brush.
If you want, garnish with fresh thyme. Serve with a side!
