How To make Hot Tamale Pie
1 tb Olive oil
1 md Onion -- finely chopped
1 md Yellow, red or green bell
-pepper -- seeded and finely -chopped 2 Garlic cloves -- minced
1 cn Unsweetend tomato sauce (16
-oz) 1 cn Pinto beans -- rinsed and
-drained (16 oz) 1 Ear corn -- kernels cut off
-cob, OR 3/4 c Frozen corn
thawed
1 t Chili powder
1 t Ground cumin
1/2 ts Fine sea salt
pn Cayenne pepper 3 c :
water
1 c Yellow stone-ground cornmeal
1 tb Freshly squeezed lemon juice
1 t Dijon mustard
1/2 ts Fine sea salt
Heat the olive oil in a large frying pan over medium-high heat. Add the onion bell pepper, and garlic and cook until softened. 6 to 8 minutes. Remove from the heat and stir in the tomato sauce, pinto beans, corn, chili powder, cumin, salt and cayenne. Pour into an 8 x 8 glass baking dish. Preheat the oven to 350 degrees. Boil the water add the cornmeal, lemon juice, mustard, and salt in a large saucepan, and stir until mixed. Bring to a boil over medium-high heat, then immediately reduce the heat to low and simmer, stirring often, until thickened, 4 to 5 minutes. Spread the cooked cornmeal over the bean mixture. TAMALE PIE | Ground Beef & Cornbread Casserole
Today, I am combining jalapeno cheddar cornbread and ground beef enchilada filling to create a delicious tamale pie recipe. This is not a pie nor a tamal, but it is a tasty cornbread casserole bake.

INGREDIENTS
2 Tbsp oil
1 lb (454 g) lean ground beef
1 beef bouillon cube
1 1/2 to 2 Tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground cumin
2 Tbsp (20 g) all-purpose flour
salt and pepper to taste
8 fl oz (236.5 ml) water
1 1/4 cup (125 g) shredded cheddar cheese
CORNBREAD MIX
1 cup (130 g) yellow cornmeal
1/2 cup (65 g) all-purpose flour
1 Tbsp (15 g) baking powder
2 Tbsp (25 g) sugar
1/2 tsp salt
1 large egg
1 Tbsp (15 ml) cooking oil
14.75 oz (418 g) can of creamed corn
1/2 cup (118 ml) milk
1 to 2 large jalapeños diced
1/2 cup (50 g) shredded cheddar cheese
*Buttered 2.7 qt rectangular baking dish*
*Bake at 400 degrees F / 204 degrees C for 22 to 25 minutes
*Once baked, allow to set for 10 minutes, then serve

Tex Mex Tamale Pie with Jiffy ~ Easy One Pot Tamale Pie Recipe
INGREDIENTS:
1 TO 1 1/2 pounds ground beef
1/4 cup salsa
1 small can red enchilada sauce
1 cup finely diced onion
1 cup finely diced bell pepper
1 small can green chilies
1/8 tsp. black pepper
3-4 cloves minced garlic
1 tsp. oregano
1 tsp. chili powder
1 tsp. smoked paprika
1 tsp. cumin
1 cup corn
1 cup grated cheese - cheddar or mix
chopped green onions
Topping:
1 box cornmuffin mix
1 egg
1/3 cup milk
1/4 cup corn
small seeded finely diced jalapeno
1/4 cup grated cheddar cheese
*Mix above ingredients. Do not over mix
Preheat oven to 400 degrees Farenheit
In a pan on medium heat add ground beef and spread out.
While beef is still pink add salsa and enchilada sauce.
Cook, chop and stir until beef is broken up. Bring up to a simmer.
Add diced onions, bell peppers and green chilies. Stir to combine.
Add seasonings. Stir and cook for 5-10 minutes or until the liquid
reduces.
Add corn and stir to combine. Remove from heat.
Add a little grated cheese on top of beef mixture.
Add corn muffin mix by spoonfuls on top of mixture and spread out
as best as you can.
Bake at 400 degrees farenheit for 25 to 30 minutes.
Remove from oven and top with more grated cheese and chopped onions.
Let cool for 10-15 minutes before serving.
Enjoy.
