How To make Hot Spicy Bean Curd
2 tb Oil
2 ea Green onions, chopped
1 ts Garlic, chopped
1 ea Green chilies, chopped
1 tb Salted black beans
1 lb Bean curd, cubed
1 tb Soy sauce
1 ts Brown sugar
1/2 c Stock
1 ts Cornstarch dissolved in 1
-- tb water Heat oil in a wok & fry the onion, garlic & chili for 30 seconds. Add salted beans & bean curd, fry gently till bean curd turns golden. Add the rest of the ingredients & cook until the sauce thickens. Serve hot over noodles or fried rice. Jack Santa Maria, "Chinese Vegetarian Cookery"

Ingredients
For the Sauce
2 tbsp tobanjang, Chinese chili bean paste
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp shaoxing wine, optional
1 tbsp black vinegar
1 tsp sugar or agave nectar
For Mapo Tofu
1 tbsp cooking oil
1 tbsp chili oil (you can substitute to cooking oil)
3 cloves garlic, chopped
2 oz ginger, chopped
1 red chili, chopped (optional)
3 green onions, chopped
1 tbsp toasted and grind Sichuan peppercorn*
1/2 lb ground pork, chicken, beef, lamb, turkey, crumbled tofu, chopped mushrooms or plant based meat
2 cups chicken or vegetable stock
1 block (14 oz) silken tofu, cut into 3/4-inch cubes
1 tbsp corn starch

Hi everyone, I'm david, i will share an easy way to steam tofu, steamed tofu is better than fried, steamed tofu is not too oily and healthy.
Ingredient
5 firm tofu
2 scallion
2 cloves of garlic
1/2 tsp black pepper
3 tbsp soy sauce
1 tbsp sesame oil
2 tbsp sweet soy sauce
1 tbsp oyster sauce
1 tbsp vinegar
3 tbsp chili oil

Deep Fried Beancurd Sticks - Chinese Dried Bean Curd Sheet Roll 烧腐竹 Recipe
Fried beancurd sticks coated with flour and egg
Sauce ingredients
Szechuan pepper 花椒
star anise 八角
ginger 姜
garlic 蒜
green onions 葱
dried chilli 干辣椒
soyabean paste 豆瓣酱
dried soy bean curd stick
green pepper
red pepper
tomato
black fungus
salt
light soy sauce
Spicy Bean Curd Recipe
Add the following to a bowl and stir to combine:
1. 3 Tbs Water
2. 5 TBs Soy Sauce or Liquid Aminos or Tamari
3. 1 1/2 Tsp Chili Paste with Garlic ( Add more for more heat )
4. 1 Tsp Sugar
5. 1 Tsp Sesame Oil
6. 2 Cloves of Garlic
Prepare the following and set them aside in a separate bowl:
1. 2 Thin Sliced Scallions separated into rings
2. 1 TBs of Diced Ginger ( About 1 inch long )
3. 14 Oz. of Cubed Firm Tofu ( Dried out for 1 hour between paper towels with something heavy on top )
Everything is ready so combine them this way:
1. Add 2 TBs of Canola Oil to a wok or large frying pan on high
2. Add the Scallions and Ginger and stir for about 3 minutes
3. Add the Tofu and delicately combine
4. Add the sauce to the pan and combine for 30 seconds
5. Turn the heat down to 20% on the stove
6. Cover and let simmer for 5 minutes or less
Here is my Spicy Bean Curd Recipe. I love this recipe because it doesn't lose its wonderful flavor as you increase the heat in the dish. I also love it because it can be made in 10 minutes and it has many flavors and textures you don't find in most meals. The Bean Curd (Tofu) is delicate and yet firm. The scallions have a nutty subtle bite. I really enjoy it.
This version is not very spicy, but feel free to double the amount of chili paste and ginger to increase the heat.
