Ingredients:

60 g sweet potato glass noodles
300g Chinese Cabbage
400 g firm tofu
1/2 tbsp oil
2 tbsp sliced green onion
3 slices of ginger
3-4 dried chili peppers
2 tbsp light soy sauce
1 tsp sugar
1 tsp salt
1 tbsp dark soy sauce

This true vegetarian dish - Quick Braised Vegetables with Red Fermented Tofu is also called Buddha's Delight (罗汉斋), and is made with reddish-brown fermented bean curd or tofu (南乳). You can add any vegetables that you like, but the most common are cabbage, fried bean curd skin, black fungus, and mushrooms are used. You can also add glass noodles and black moss to bulk up the dish.
When it comes to eating during the Lunar New Year period, Chinese commonly believe that more and more luxurious food is better. On the first day of the Chinese New Year, however, many households choose a vegetarian diet in honour of Buddha. Devout Buddhists go vegetarian on the first and fifteenth days of each lunar month to honour Buddha and accumulate good karma. Some people believe that doing so on the first day of the first lunar month will bring them even more good karma. Though it’s less common these days, on the night before the first day of Chinese New Year, families traditionally make a vegetarian dish called 守岁斋 (literally means guard year vegetarian dish) on the night before the first day of CNY. Chinese traditionally stay up late on the eve of the Lunar New Year as a practise known as 守岁 (guarding the year) to help prolong their parents' lives. Chinese Red Cabbage & Bean Curd Salad Recipe (Vegetarian Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
150g red cabbage
50g bean curd
3 cloves garlic
2 spring onions
3 dried red chillies
1 Tbsp red peppercorns (Sichuan pepper)
1 Tbsp white vinegar
1 Tbsp sugar
Salt to taste
Method:
1. Separate the red cabbage leaves and soak in cold water for 30 minutes.
2. Finely chop the garlic, the spring onions and roughly chop the chillies.
3. Cut the bean curd into very thin threads then place in a large bowl.
4. Cut the red cabbage into very thin threads and place in the bowl with the bean curd.
5. Heat 2 Tbsp of oil in the pan and add the red peppercorns (Sichuan pepper).
6. Fry for 5 minutes then remove peppercorns from the wok.
7. Add chilli and spring onion into the wok, fry for a minute, then remove from heat to cool.
8. Pour the cooled oil onto the red cabbage and bean curd.
9. Add the garlic, vinegar, sugar and salt. mix well.
10. Transfer to a dish and serve.

????需要準備的材料/Ingredients????
????雞蛋豆腐 1盒/ Tofu 1 box
????白菜 250克/ Napa cabbage 250g
????醬油 1.5大匙/ Soy sauce 1.5T
????蠔油 2大匙/ Oyster sauce 2T
????鹽巴 1(⅛小匙)/ Salt 1(⅛t)
????胡椒 1(⅛小匙)/ Pepper(⅛t)
????蒜頭 25克/ Garlic 25g
????辣椒 10克/ Chili pepper 10g
????蔥花 15克/ Green onion15g
????蛋 2顆/ Egg 2pcs
????蝦米 15克/ Dried shrimp 15g
????水 300毫升/ Water 300ml
⚠️簡單哥小提醒⚠️
1大匙 = 1湯匙 = 15ml
1小匙 = 1茶匙 = 5ml
1T(bsp)=15ml
1t(sp)=5ml
????備料????
①蒜頭切去蒂頭,拍扁後切成碎狀備用
②蔥段切成蔥花備用
③辣椒切圈備用
④將白菜去梗,切段備用
⑤將豆腐切成片狀
⑥將雞蛋打散
????開始簡單製作????
①熱鍋下油,下豆腐、蛋,兩面煎至金黃瀝起備用
②原鍋下油,下蔥白、蒜、蝦米炒香
③炒香後下白菜、醬油、蠔油、水、鹽巴、白胡椒調味
④再將雞蛋豆腐下鍋燉煮
⑤滾後轉小火再繼續滾7分鐘
⑥最後撒上辣椒、蔥綠點綴,即可起鍋

①cut off the garlic glans , smack the garlic firstly ,then mash the garlic into pieces
②chop green onion
③chop chilli pepper
④remove the cabbage stems firstly , then cut into pieces
⑤slice the tofu
⑥stirring eggs
????cooking????
①Preheating the pot then add oil, add tofu and eggs , pan fry it until it golden for two side , then put aside
②Add oil in the same pot , stir-fry scallion stalk , garlic and dried shrimp
③Then add napa cabbage, soy sauce , oyster sauce, water , salt and pepper
④Add tofu to simmer
⑤The water came to boil , turn low heat then simmer for 7mins
⑥use chili pepper and green onion to embellish , then you can turn of the heat
