Honey Oatmeal Raisin Cookies
Looking for a healthy sweet? This is your recipe. I must let you know it has a STRONG taste of honey. If you are looking for a sugary taste, this is not the recipe. Each cookie is 100 calories. Mix 1 c. instant oats, 3/4 c. whole wheat (I would use a little less), 1 1/2 tsp. baking powder, 1/8 tsp. salt, 1 1/2 tsp. cinnamon, 2 TBSP unsalted melted butter or coconut oil, 1 egg (can be substituted), 1 tsp. vanilla, 1/2 c. COXS HONEY and 1/4 c. plumped raisins. Bake at 300° for 10 minutes or less. This can be converted to gluten and dairy free. Daughter of a successful beekeeper, Virginia grew up working the bees, packaging honey and helping her dad make deliveries in Southeast Idaho and parts of Utah. In 1978, she reigned as Idaho’s first Honey Queen. She has spent her life educating others about the uses of honey, beeswax and byproducts. She enjoys developing and experimented with honey-infused recipes. PEPTANG honey oatmeal cookies
These healthy cookies are a perfect snack when you want something healthy and delicious too. #MakeAMealOutOfIt
INGREDIENTS
1 cup Oats
½ cup Desiccated Coconut
2 tbsp Coconut Oil
¼ cup Peptang Honey
1 tsp Baking Powder
1 tsp Vanilla Essence
¼ tsp Salt
1 Egg
½ cup All Purpose Flour
¼ cup Milk
DIRECTIONS
1. Pre heat oven to 180°C
2. Mix all the ingredients until everything is well combined.
3. Oil your baking tray with oil or butter.
4. Place the cookie dough on the tray portioning into 1 tbsp each.
5. Bake at 180°C for 20 min bottom heat and 5 min top heat until golden brown.
6. Enjoy or you can store them in your cookie jar for up to a week and enjoy them later.

INGREDIENTS:
250 x grams of unsalted butter (softened at room temperature)
1 x cup wholemeal flour
1/2 x cup coconut flour
1/2 x cup oats
1/2 x cup light malt powder
1/3 x cup brown sugar
1/3 x cup honey
1 x egg
1 x teaspoon vanilla extract
1 - 2 x cups extra oats for coating
METHOD:
-preheat oven to 180 degrees celsius
-in and electric mixer, beat the sugar and butter on high till creamy
(approx 5 minutes)
-add the egg and vanilla to the mix and beat for another two minutes till well combined
-in a separate bowl combine all the dry ingredients and mix well
-add the mixed dry ingredients to the wet mix and combine well with a wooden spoon
-take spoonfuls of the dough and roll into a ball, then roll the dough ball into the extra oats and coat well
-place the coated dough balls on trays lined with baking paper
-bake in a oven for approx 15 minutes, (rotating the tray a the half way mark), or until golden and the oats are lightly toasted
-remove from oven and allow to cool for 5 minutes on the baking tray then transfer to a wire rack to cool completely
