Are these M&M cookies? White chocolate chip cookies? Mini egg cookies? I settled on calling these easy Easter cookies, because white chocolate M&M mini egg sprinkle cookies was just too long of a title! These are the perfect easy chewy cookie, they are soft and chewy white chocolate chip cookies with tons of Easter candy mix ins! I make these with sprinkles, M&M's, white chocolate chips and chocolate mini eggs, but you could use which ever candies you like! Switch up the mix-ins and they can be the perfect cookie for any holiday! Full recipe below.
Easter Cookie Recipe
Ingredients:
1 + 1/4 Cup All purpose flour
1/2 Tsp Baking soda
1/4 Tsp Sea salt
1/2 Cup Butter (softened to room temperature)
1/3 Cup White sugar
1/3 Cup Brown sugar
1 Tsp Vanilla extract
1 Large egg
1-2 Tbs Sprinkles
1/3 Cup White chocolate chips
1/3 Cup Easter M&M's
1/3 Cup Mini chocolate eggs
Directions:
Preheat the oven to 350 F/175 C. Line 2 cookie sheets with parchment paper. In a medium bowl combine flour, baking soda, and sea salt. Whisk until well combined and set aside. In a large bowl or in the bowl of a stand mixer combine softened butter and both sugars. Cream until well combined. Add in the egg and vanilla and continue mixing until all the ingredients are incorporated. Add your dry mixture into your wet mixture and mix on low until your dough comes together. Add your sprinkles and mix until just combined. Add the white chocolate chips, Easter M&M's and mini eggs and gently fold in with a spatula.
Using a 1.5Tbs cookie scoop (or two spoons) scoop dough onto parchment lined cookie sheets, leaving 2 inches between each for spreading. Add a few extra candies on top and bake for 9-10 minutes or until the edges are just golden brown. Let them cool on the pan for 5-10 minutes (they will be very soft) before moving to a wire rack to finish cooling completely. This makes 20-24 cookies, double your recipe for a large batch!
