1.5-2 lbs potatoes (cleaned, peeled, and chopped)
3 cups chicken stock
4 strips thick cut bacon
1/4 cup flour
2 cups whole milk
2 tbsp garlic paste or minced garlic
1 tbsp chicken base
8 oz shredded cheddar cheese
green onion, sour cream, cheese (garnish)
salt, pepper, garlic, onion powder
Directions:
In a large soup pot, cook bacon until it gets crispy and remove to a paper towel. (optional! You can skip the bacon if desired)
2. Add butter and onion to the bacon drippings (or just straight into the pot) and sauce until the onions become tender (4-5 mins) Add Garlic and Chicken Base
3. Add flour and stir constantly for 1 minute and then add milk, chicken stock, and peeled/diced potatoes. Bring this to a boil for about 15-20 minutes or until the potatoes are fork tender. Break the potatoes up with your fork (they will cook down and mix into the soup. I like bits of potato in my soup but if you want it smoother, just mash them up a bit more)
4. Season to taste with salt, pepper, garlic, onion powder and adjust according to your
5. preference. Add 2/3 of your bacon to the soup and save some for garnishing your bowl.
6. Ladle your soup into your bowl and top with cheddar cheese, sour cream, bacon, and green onion.

Loaded with bacon and creamy potato goodness, this is a favorite comfort food in my household.

Ingredients
2 ½ lbs gold potatoes peeled and diced into pieces no larger than 1” (this was about 6 Large potatoes for me/1.15kg)
6 strips (uncooked) bacon cut into small pieces
3 Tablespoons butter
⅓ cup all-purpose flour 42g
1 medium yellow onion chopped (about 1.5 cup/200g)
3 large garlic cloves minced
4 cups chicken broth 945ml
2 cups milk 475ml
2/3 cup heavy cream 155ml
1 ½ teaspoon* salt
1 teaspoon ground pepper
1/4 - 1/2 teaspoon ancho chili powder**
2/3 cup sour cream 160g
Shredded cheddar cheese, chives, and additional sour cream and bacon for topping optional
Instructions

00:27 Place bacon pieces in a large Dutch Oven or soup pot over medium heat and cook until bacon is crisp and browned.
01:07 Remove bacon pieces and set aside, leaving the fat in the pot.
01:21 Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes).
01:39 Add garlic and cook until fragrant (about 30 seconds).
02:01 Sprinkle the flour over the ingredients in the pot and stir until smooth (use whisk if needed).
02:25 Add diced potatoes to the pot along with chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Stir well.
03:40 Bring to a boil and cook until potatoes are tender when pierced with a fork (about 10 minutes).
04:00 Reduce heat to simmer and remove approximately half*** of the soup to a blender (be careful, it will be hot!) and puree until smooth (this is about 5 cups of soup, but just eyeballing the amount will be fine. Alternatively you can use an immersion blender.).
04:50 Return the pureed soup to the pot and add sour cream and reserved bacon pieces, stir well.
05:15 Allow soup to simmer for 15 minutes before serving.
05:20 Top with additional sour cream, bacon, cheddar cheese, or chives. Enjoy!
Notes
*I recommend starting with a more reserved amount of salt and then adding more as needed, the amount of salt needed will vary depending on the type/brand of broth you use
**If you haven't used ancho chili powder before, I recommend starting with 1/4 teaspoon and then taste-testing before increasing to 1/2 teaspoon if you like the taste.
***If you want a completely creamy soup you can puree all of it, just puree in batches, about half of the soup at a time. I prefer my potato soup with actual chunks of potatoes and prefer to puree just half of it.

COOKiNG 101~HOMEMADE POTATO SOUP RECiPE ????
Welcome back to another Cooking 101 we are gonna be making Machine Shed Potato Soup
here are all the ingredients that you’re going to need to make this super yummy soup
Ingredients:
1 bag of yellow potatoes chopped into small chunks
1 stalk of celery sliced into thin pieces
12 carrots chopped
2 medium onions chopped
1 package of bacon
1 tablespoon of garlic
2 tablespoons of parsley
2 tablespoons of minced onion
1/2 tablespoon of garlic salt
1/2 tablespoon of white pepper
1 cup of flour
1 tablespoon of garlic powder
6-8 cups of chicken broth
2 cups of heavy whipping cream
Directions:
1.)Start by cooking the bacon, so it can get crisp
2.)Chip all of the vegetables and then once the bacon is crisp, add it to the pan and cook until veggies are tender but not mushy.
3.)While the veggies are cooking, chop your potatoes into small chunks and add a little bit of chicken broth to your pot and start to simmer on low.
4.)Once the veggies are tender add them to the potatoes (making sure to reserve the grease from the bacon to make the roux) and continue to simmer on low just so the potatoes will start to cook and not be completely raw when the cream is added
5.)To the bacon grease add the flour, garlic, salt, and pepper. Whisk on medium heat till a paste forms.
6.)Then slowly add in the chicken broth, followed by the whipping cream.
7.)Add the parsley and garlic powder. Stir and let simmer for about five minutes then add to the veggies.
8.)Continue cooking on low until your potatoes are tender and serve with cheese on top
