How To make Holiday Truffles
3 pk Semisweet chocolate chips6oz
1 cn Sweetened condensed milk
2 tb Almond flavored liquer
1/4 ts Almond extract
2 tb Orange liquer
In heavy, medium sized pan, over low heat, melt chips with sweetened condensed milk. Remove from heat, divide into 2 bowls. To one bowl, add almond liquer and almond extract, To the other bowl,add orange flavored liquer. Chill 1 hour. Shape into one inch balls.Roll in coating. Chill until firm ( 1 hour) Store covered at room temperature

Makes about 18-20 balls
Ingredients:
1 cup (250g) Smooth peanut butter
6 tablespoons (90g) butter, softened
1¾ cups (220g) Powdered sugar
1 teaspoon Vanilla extract
8oz (225g) Dark chocolate
2 teaspoons Coconut oil
Directions:
1. In a large bowl beat peanut butter, vanilla extract and butter until incorporated and smooth. Add powdered sugar and beat until incorporated.
2. Refrigerate for 30 minutes.
3. Roll peanut butter mixture into small balls. arrange on a baking tray lined with parchment paper. Refrigerate for 1 hour.
4. Chop the chocolate, place in a heatproof bowl, add coconut oil and set the bowl over a pot with simmering water (double boiler). Let the chocolate melt completely. let cool for 5-10 minutes.
5. Dip each peanut butter ball into the melted dark chocolate, shaking gently to remove the excess and place back onto the baking tray.
6. Allow to set in the fridge for at least one hour before serving.

Christmas is five months from today! So it is fitting that this will kick off our Christmas in July week! The holidays are coming series always holds a special place for many of my subscribers. Many of you have told me how much you look forward to those videos. So as a special treat this year we are hosting an entire week of holidays are coming videos! We are kicking it off with these super simple and delicious holiday chocolate truffles.
I have been making these for years and have wanted to share them with you for the last five years, but they never seemed to fit in at the time when I had so many different things planned for you in years past. Well today I am pleased to share with you these wonderful holiday treats!
These truffles are very easy to make and they will pack a powerful punch with your friends and family when you present them with boxes full of these delicious chocolate gems as holiday gifts. Really only three ingredients are needed. Chocolate chips, condensed milk and extract of your choice.
You melt everything together, mix well and chill until you can roll into tiny balls of chocolate goodness. You can leave them plain, roll them in cocoa, ground nuts, coconut, coffee powder, chili powder, powdered sugar, crystal sugar, sprinkles, jimmies or sea salt. The possibilities are endless.
These should be kept in the refrigerator until they are given or served. You can also make these with white chocolate if you like or even peanut butter chips. Same concept. I have used chocolate condensed milk, but for many years used regular old plain sweetened condensed milk. So really the only limit here is your imagination!

Easy dark chocolate truffles to make at home for special occasions

INGREDIENTS
300 grams chocolate tablets with 70 % cocoa
40 grams butter (unsalted)
250 ml good quality pure liquid cream (heavy cream)
50 grams or more cocoa powder to coat the truffles.
you can add at the end ( before the cooling) a dash of liquor if you like (grand marnier, cognac, whisky or rhum) or some vanilla extract to sweetened the chocolate.
Cooling time : in a tray covered with cling film ( bottom and top) then in the freezer for one or 2 hours.
for the decoration you can also roll the truffles in desiccated or coconut powder and chocolate shaving dark or white
Important Cooking notes:
- slight adjustment from the video to make things go smooth: Bring your cream to the boil and as soon as it starts to boils, TURN THE HEAT OFF then add the chocolate in bit by bit. you can also just put the chocolate in a glass bowl and pour the hot cream over the chocolate instead (that method is even better if you never work with chocolate)
!! If your chocolate splits, just add a few tablespoon of cold water to it and whisk until it gets back on track !!
- Don't forget to add a cling film on top of the chocolate ganache before putting it in the freezer to solidify.
The time it takes for the ganache to solidify in the freezer may vary depending on what freezer you use.
