How To make Hazelnut Chocolate Toffee
1 1/4 c unsalted butter -- (2-1/2 sticks)
1 1/4 c Packed light-brown sugar
1/4 c Water
1 tb Honey
1 c Toasted, skinned hazelnuts -- chopped
1/4 t Vanilla extract
1 c Semisweet chocolate chips (6 oz)
Butter a small baking sheet. Melt the butter over low heat in a large heavy saucepan. Add the sugar, water, and honey and stir constantly until melted, using a wooden spoon. Increase the heat to moderately high and continue cooking for 15 minutes, or till the mixture reaches 290 degrees (hard-ball stage) on a candy thermometer, stirring often
with a wooden spatula, scraping the bottom of the pan to make sure the mixture is not sticking. Remove the pan from the heat and stir in the chopped nuts and vanilla extract. Pour the toffee evenly onto the prepared baking sheet. Cool about 5 minutes, until the surface is barely set. Sprinkle the top of the toffee with the chocolate chips. Let stand about 10 minutes, until the toffee is completely set and the chocolate is melted. Spread the chocolate evenly in a thin layer over the toffee. Cool completely until the chocolate is firm. OK, this is one of my “Pastry 101 videos”!
Caramelised nuts (or candied nuts) are great as snacks, especially for kids! But they are also used widely as decorations for cakes/cookies etc.

▶Candied Nuts◀
Almond or any other types of nuts 125g
Sugar 40g
Water 10g
Butter 5g
① Add water + sugar into the saucepan and raise the temp to 115℃ to make a sugar syrup.
② Add in the nuts and mix well.
③ The sugar will crystallise over the nuts - keep mixing it with your spatula and the crystallised sugar will turn into caramel.
④ Turn the heat off when you have the perfect brown colour coated on the nuts.
⑤ Add the butter and mix well.
⑥ Place it on a silicone mat/parchment paper and let it cool at room temp.
Storage: Can store in an air-tight container in the fridge for a month.

Honeycomb Toffee
Recipe:
2 Cups Sugar
1/2 Cup Light Corn Syrup
1/3 Cup Water
1 Tbsp. Baking Soda
Dark Chocolate
Sea Salt/Maldon Salt
Candy Thermometer
Line a 9 inch baking tray with parchment paper and grease thoroughly.
Set aside a metal whisk and 1 Tbsp. of Baking Soda.
In a LARGE saucepan (bigger the better - as this will more than triple in size) over medium/high heat - combine sugar, corn syrup, and water. Stir to incorporate then leave to boil. Insert candy thermometer and continue to heat - without stirring - until the mixture reaches 300˚F (150˚C). Remove from heat and - working quickly - add the baking soda and quickly whisk into the sugar syrup (whisking for no more than 5 seconds - to prevent deflating the toffee). The mixture will begin to expand, quickly pour it into the prepared pan and leave to set DO NOT MOVE for 1-2 hours.
Once the toffee has cooled and set, remove from pan and using a blunt object, shatter the toffee into bite size pieces.
Melt Chocolate in a microwave safe bowl for 75-90 Seconds - stopping to stir after every 30 seconds. Dip the toffee pieces in chocolate and place on a lined baking tray. Finish with a sprinkle of sea salt and place in the refrigerator to cool for 15 minutes. Enjoy! All Tasty music provided by Audio Network and Warner Chappell Inc. Used with permission

DARK CHOCOLATE BARK RECIPE
Ingredients:
7 oz dark chocolate (200g)
1/2 cup almonds (100g)
1/2 cup peanuts, raw (100g)
1 tbsp maple syrup
pinch of salt
NUTRITIONAL INFO (per piece):
107 calories, fat 7.6g, carb 9.2g, protein 3g
Preparation:
For roasted nuts: in a bowl combine almonds, peanuts and maple syrup.
Spread in air-fryer basket, sprinkle with salt and air-fry for 10 minutes at 340F (170C).
Break the chocolate into small pieces and melt in the microwave, stirring every 30 seconds.
Add the roasted nuts and stir until all the nuts are coated.
Spread the mixture on a lined baking tray, top with some extra nuts and put in the freezer for 30 minutes.
Cut into bite sized pieces and store in the fridge or freezer.
