3 lb Corned beef
1 c Orange marmalade
4 tb Prepared Dijon mustard
4 tb Brown sugar
Place corned beef in large pot and cover with boiling water.Bring to a boil,lower heat,cover partially and simmer as slowly as possible for about 3 hours or until very tender when tested with a fork. Preheat oven to 350
degrees.Mix marmalade,mustard and sugar together in a small bowl.When meat is done,remove from pot and drain.Place meat on an oven proof serving dish and pour marmalade mixture over it, coating thoroughly. Bake beef for 30 minutes or until glaze is crisp and brown.Serve hot or at room temperature with boiled cabbage,potatoes and or carrots. Serves 6 to 8.

Since St. Patrick's day is this week, I thought it might be fun to share a different way of preparing a corned beef brisket that did not require you to slow cook it or pressure cook it.
When I was a kid my grandmother used to roast her corned beef with a brown sugar glaze. I took mine one step further. I mixed the brown sugar with some brown mustard and then slathered this mixture all over my trimmed brisket. I then liberally topped the roast with a good dose of cracked black pepper.
This roast took about two hours to bake, but yours will take more or less depending on how big your brisket may be. You simply need to roast it until it is tender and slice-able. You just keep checking after two hours and you'll be good.
I served mine with a hot sweet and sour slaw that I cooked in the oven as well as some baked potatoes. This meal was a winner, I only wish I had done two of the corned beef so I could have had leftovers of the meat. It was so good, my family devoured it!

How to Make Glazed Corn Beef and Cabbage
For the Corned Beef (serves 4):
2 1/2 to 3 lb. corned beef brisket with spice packet ( I used a lean flat cut center piece)
8 small red potatoes
4 medium large carrots, peeled and cut in half
1 large green cabbage, cut in quarters
For the Glaze:
1/2 cup brown sugar
1/2 cup water
1/2 cup Dijon or brown mustard
Directions:
Preheat oven to 325 degrees. Remove meat from package and place on a rack in a foil lined pan, fat side up. Sprinkle spice packet over corned beef. Place the pan in the oven, and add about 1/2 to 1 inch of water to bottom of pan. (water level should be just below the rack.) Cover the pan with foil. Bake about 2 1/2 to 3 hours. Make the glaze. In a sauce pan, combine the brown sugar and 1/2 cup water. Bring to a simmer over medium-high heat. After about 5 minutes, stir in mustard. Continue simmering another 2-3 minutes and set aside. (Reserve 1/4 cup of glaze for platter.) Boil the Vegetables: In a large pot with add red potatoes, carrots and cabbage. Add enough water to steam vegetables. Cook until tender. Keep covered until ready to serve. After 2 hours of cooking corned beef, uncover and brush glaze over top. Continue to cook the beef until internal temperature reaches 160 degrees, re-glazing every 15 minutes or so. When done, remove from oven and let rest for 10 minutes before slicing. Always slice meat across the grain. Arrange corned beef and vegetables on platter. Brush sliced corned beef with reserved glaze.

3 lbs point cut corned beef brisket (trim off excessive fat) (1.4 kg)
1 bottle Guinness stout (11.2 oz/331 ml)
½ cup brown sugar (90g)
1 packet spice mix included with corned beef
1½ lbs baby potatoes (scrubbed and cut into bite size pieces) (675g)
2 large carrots (peeled and cut into chunks)
½ head cabbage (cut into 4 wedges) (1 lb/450g)
½ tsp salt
¼ tsp ground pepper
2 tbsp vegetable oil
