How To make Ginger and Peach Chicken
4 x Chicken Breast halves *
8 oz Can Peach slices, lite syrup
1 t Cornstarch
1/2 t Grated Gingerroot
1/4 t Salt
1/2 c Sliced Water Chestnuts,drain
2 c Hot cooked Rice
6 oz Pkg frozen Pea Pods, cooked
* 4 med (12 oz total) boned skinless chicken breast halves Spray a large skillet with nonstick spray. Preheat skillet over medium heat. Add chicken. Cook over medium heat for 8-10 minutes or till tender and no longer pink; turn to brown evenly. Remove from skillet; keep warm. Meanwhile, drain peaches, reserving juice. Add water to juice to equal 1/2 cup. Stir in cornstarch, gingerroot, and salt. Add to skillet. Cook
and stir till thickened and bubbly. Cook and stir 1 minute more. Gently stir in peaches and water chestnuts: heat through. On a serving platter or 4 individual plates arrange rice, pea pods, and chicken. Spoon sauce over chicken. ************************************************************** Per serving: 321 calories, 30 g protein, 41 g carbohydt=rates, 3 g fat, 72 mg cholesterol, 205 mg sodium, 459 mg potassium.

Ed shows you a great way to showcase juicy seasonal peaches by grilling them on the Barbie and serving them in a salad perfectly matched with succulent barbecued chicken
Peach Chicken ????
This is absolutely delicious. I will make this again.
Peach recipe:
Chicken breast
3 or 4 fresh peaches - sliced
2 tsps minced garlic or 2 cloves minced
1/4 cup balsamic vinegar
1/2 cup chicken broth
1 TBSP olive oil or any cooking oil
Salt and Pepper chicken to taste
Heat oil on medium heat in skillet and place chicken in skillet and cook 6 to 8 minutes on each side till chicken is done. Take chicken out and set aside.
Put vinegar and broth in skillet and scrap up drippings in pan till comes to a slow boil then add garlic and cook 1 minute and add peaches, stir in liquid then cover and cook 5 to 8 minutes till peaches are tender. Put chicken on top of peaches, cover and let simmer a minute or two then serve. Enjoy!

INGREDIENTS:
-1 tbsp rapeseed oil
●4 skinless, boneless chicken breasts, about 565g (11/4 lbs)
●1/2 tsp salt
●1/4 tsp pepper
●30g brown sugar
●2 tbsp low-sodium soy sauce
●2 tbsp rice vinegar
●60ml cup orange juice
●5g freshly grated ginger
●2 cloves garlic, minced
●125ml low-sodium chicken broth
●4 large firm-ripe peaches, cut into 1cm (1/4- in) slices, or 285g (10 oz) 1125ml (41/2 cups)
●30g sliced almonds
