How To make Chicken and Peach Salad Croissant
8 ounces diced chicken
2 tablespoons celery
diced
1 tablespoon onion :
diced
4 ounces canned peaches, diced and drained
1 tablespoon sliced almonds
1 tablespoon sour cream
1 tablespoon salad dressing
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1/8 teaspoon salt
bread of your choice
Combine sour cream, salad dressing, spices, celery and onion. Add to chicken and stir well. Add almonds, then gently fold in peaches, being careful not to mash them up. Chill till ready to serve.

1 Whole Rotisserie Chicken (chopped)
1/2-1 Cup chopped Celery
1/2-1 Cup chopped Onions
3-6 Tbsp Sweet salad cubes or relish
1-2 Cups Mayonnaise
2 tsp Sugar
1 tsp Salt
1 tsp Pepper
1 tsp Slap ya Mama Seasoning
1 tsp lemon juice
**Adjust ingredients to your liking**

HOW TO MAKE A OLD SCHOOL CHICKEN SALAD FOR ONLY 5$ (A COOL QUICK REFRESHING RECIPE FOR THE SUMMER)
This is an awesome very easy recipe for a quick summer lunch or dinner and very cost effective
OLD SCHOOL CHICKEN SALAD:
1 ROTISSERIE CHICKEN(LARGE)
1/2 MEDIUM ONION (MINCED)
1/8 CUP CHOPPED CELERY(optional)
1/2 CUP SWEET PICKLED RELISH
3 HARD BOILED EGGS(DICED)
1 TSP. KOSHER SALT AND WHITE PEPPER
1 CUP MAYONNAISE(HELLMANS OR DUKES)
Onion: Chop fine (mince )
Chicken: Take off skin, bones and cartilage. Chop chicken into 1/2 in size cubes.
Celery: chop in small pieces
Combine all other above ingredients in large bowl and mix until well incorporated
Add additional ingredients like chopped walnuts and grape halves for special occasions.
i like to eat mine on soft bread
you can eat with crackers or even lettuce and tomatoes

Like many events in the Cajun and Creole communities, food is a central focus on Valentine’s day. The fellas and the ladies are making special dishes for their loves. Over the next week we are going to prepare a special Valentine’s Day breakfast, lunch, dinner & dessert that’ll hit the spot. Try one or all this Valentine’s Day.
For LUNCH it’s a quick and easy Chicken Salad. This is a dish you can make the day before. You can package and send to work for a delicious lunch. If you’re pampering that special someone -- Put a big scoop between a croissant or the bread of your choices. Add lettuce and tomato and deliver a - lunch in bed/couch/chair/table- that is sure to please. Enjoy! Oh, and remember, when you mix a lil’ bit of Creole with a lil’ bit of Cajun, dat’s good eatin’.

Avocado Chicken Salad + Easy Picnic
Make these delicious recipes for an easy picnic lunch! Avocado chicken salad, peach and strawberry fruit salad, and blueberry chocolate clusters are perfect for an outdoor meal!
Recipes:
AVOCADO CHICKEN CROSISANTS
-Mix together 2 cups shredded chicken, 1/2 diced red onion, salt and pepper, 1 mashed avocado, 1/4 cup cilantro, and juice of one lime
-Fill croissants with chicken salad
STRAWBERRY PEACH SALAD
In a bowl, combine:
-3 nectarines, diced
-6 strawberries, sliced
-3 peaches, diced
In a different bowl, combine:
-1 tbsp honey
-1 tbsp chopped basil
Cover fruit with topping and stir to coat then sprinkle with lime zest
BLUEBERRY CLUSTERS
-Add 1 cup blueberries to 1 cup melted white chocolate
-Stir to evenly coat blueberries
-Using a fork, remove blueberries in clusters and place on wax paper
-Top with lime zest and chill for 10 minutes
