How To make Ginger Creams (Ginger Bread Boys)
1 c Margarine
1 1/4 c Sugar
1 Egg
1 c Molasses
1 c Hot coffee
1 tb Baking soda
1 ts Ground cinnamon
1 ts Ground ginger
1 ts Ground cloves
1 ts Salt
5 1/2 c Flour
Recipe by: Edith Anderson Cream margarine and sugar together until smooth, then add ingredients in order. Chill thoroughly before rolling out; cut with cookie cutters (gingerbread men preferred!). Bake at 375 for 12 minutes. -----

Ginger bread cookies!
Ginger bread cookies- What would Christmas be without gingerbread cookies? This is a rich tasting recipe, we made medium size cookies and had plenty of dough left over to bake!
here's what you need. We used a store bought cookie icing from Wilton with a icing bottle and the tiniest piping tip we had.
3 cups all-purpose flour
3/4 cup brown sugar
3/4 tsp baking soda
1 Tbsp ground cinnamon
1 Tbsp ground ginger
1/2 tsp ground cloves
1/2 tsp salt
12 Tbsp butter , room temperature, cut into 12 pieces
3/4 cup molasses
2 Tbsp room temp milk
Add flour, brown sugar, baking soda, cinnamon, ginger, cloves and salt to a mixing bowl and whisk.
Add the butter pieces and use a pastry blender to cut the butter in until the mixture resembles fine meal.
With a mixer running on low speed gradually add the molasses and milk and mix until combined, about 30 seconds.
Divide the dough in half, forming each into a ball. Wrap each in wax paper and refrigerate for 2 hours or overnight, or place in the freezer for about 20 minutes, until firm, if you’re in a hurry. We had placed in the fridge for 2 hours and still wasn't as firm as we liked so we put into freezer for 15 mins and it was perfect.
Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper.
Remove one dough sheet from the fridge/freezer and place on the counter. Roll out the dough on a thin layers of flour on a solid surface, until it’s about ½ inch thick. Cut gingerbread men and place them on prepared baking sheets.
Bake the cookies until set in the centers and the dough barely retains and imprint when touched very gently with fingertip, 8 to 11 minutes (depending on the size of your cookie cutter). Do not overbake!!
Remove the cookies to a wire rack. Allow to cool to room temperature before frosting.
Decorate as you desire, get the kids involved! They will love this! It's delicious y'all!
