Learn how to make animal crackers at home that are even cuter than Barnum’s! Including how to make your own white & pink frosted animal cookies with a super simple 2-ingredient icing.
Animal crackers are such a tasty, crunchy snack—and it’s also so easy for me to zone out & eat them mindlessly. But after making this animal cracker recipe at home, I find I’m more inclined to slow down and appreciate what I’m eating, how it tastes, and the joy it brings me!
I’ll be frank: making homemade animal crackers is a process that requires some patience. But it can also be a creative & fun way to spend an afternoon in the kitchen. And those adorable iced animal cookies were so worth the effort for me!

How to Make Easy, Prize Winning Frosted Christmas Cookies
It would not be Christmas in our home without these favorite frosted butter cookies with their essence of almond and vanilla wafting through the house. Cutting out, baking and frosting cookies makes a fun activity during the holidays for the entire family. And don't forget about your friends and neighbors, who love receiving these as gifts....just place a few on a pretty plate, wrap in clear cellophane and add a pretty bow.
A little secret, these aren't just Christmas cookies....Valentine's Day using heart cookie cutters, Easter with crosses and bunnies, etc., the possibilities are endless!

Prize Winning Frosted Christmas Cookies
Dough
1 cup soft salted butter ( 2 sticks)
1 1/2 cups powdered sugar
1 egg
1 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
In large mixing bowl, add soft butter and powdered sugar and blend with an electric mixer until fluffy and creamy, about 1 minute, scraping sides of bowl at least once.
Add egg, vanilla and almond extracts. Mix until well blended, scraping sides of bowl when needed.
Add flour, baking soda and cream of tartar and mix until all flour is incorporated, but don't overmix.
Chill dough for about 2-3 hours or overnight.
Preheat oven to 375 degrees.
On a lightly floured surface, roll chilled dough (dough will be very stiff) to about 1/4 inch thick. Cut out shapes, being careful when removing dough from cutter so as not to break off any pieces. Reroll scraps, without kneading dough too much, and continue.
Place on greased or parchment lined baking sheets and bake for about 8 minutes. Cookies should only be golden around some edges and on the backs.
Let sit on baking sheet for 5 minutes before moving to a cooling rack. If you happen to overbake, remove immediately so cookies do not continue to brown.
Let cool completely before frosting.
Makes 3-4 dozen depending on size of cookie cutters.
Buttercream Frosting
1 box powdered sugar
1/2 cup soft salted butter (1 stick)
1 teaspoon pure vanilla extract
1/4 cup whole milk ( preferably)
food coloring, if desired

In a medium bowl, combine butter, powdered sugar, vanilla and milk. Mix until light, creamy and well blended, scraping bowl when needed. (You should see no lumps from the powdered sugar) Add food coloring, if using.
Frost and sprinkle each cookie before starting the next. ( sprinkles will roll off if you wait)
Let cookies sit out for 2-3 hours before storing in an airtight container between layers of wax paper. This allows frosting to set.

FROSTED VEGAN PUMPKIN COOKIES:
Ingredients:
1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
1/4 cup coconut oil, softened
3/4 cup sugar
1/2 cup pumpkin puree
1 teaspoon vanilla extract
1 1/4 cups flour
1 teaspoon baking powder
1 tablespoon pumpkin pie spice
1/4 teaspoon salt
FROSTING:
1 cup powdered sugar
1.5 tablespoons non-dairy milk
1/2 tablespoon coconut oil
1 teaspoon vanilla extract
Method:
Preheat your oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking mat.
Prepare your flax egg by whisking together 1 tablespoon of ground flaxseed with 3 tablespoons of water. Set aside to thicken.
In a large bowl, mix together the melted coconut oil and sugar until combined.
Add in the pumpkin puree, vanilla and thickened flax egg and mix until smooth.
In a separate bowl, whisk together the dry ingredients, from the flour to the salt. Add the dry ingredient into the wet ingredients and mix until a sticky, thick batter forms.
Drop the batter by heaped tablespoon amounts onto your prepared baking sheet.
Bake the cookies for about 18 minutes or until the bottoms turn golden brown.
Remove the cookies from the oven and allow them to cool while you prepare the frosting.
To make the frosting, whisk together the powdered sugar, non-dairy milk, coconut oil and vanilla until a smooth frosting forms. If it's too thick you can add more non-dairy milk 1 teaspoon at a time until it reaches your desired consistency.
Either dip the top of the cookies into the frosting or use a spoon to spoon 1-2 teaspoons worth of frosting over each cookie.
Allow the frosting to harden and then serve!
