How To make Fried Won Tons
1 lb Won ton skins
1/2 lb Fresh ground pork
1/2 lb Fresh prawns
4 Dried mushrooms, soaked for
-2 hours 8 Water chestnuts, finely
-chopped 2 Stalks green onions, finely
-chopped 2 sm Eggs, beaten
1/4 ts Pepper
1 1/2 ts Salt
Here are three won ton related recipes++fried won tons, won ton soup and a dip for the fried won tons. I have recipes for won ton dough too, if you want them. Personally, I find the won ton skins available in markets to be just fine and a lot less work! Yield: About 60 to 70. Shell and devein prawns. Mince fine. Stem mushrooms and mince caps. Mix with prawns, pork, water chestnuts, green onions, half of the beaten eggs and all of the seasonings. WRAPPING: Place won ton squares on working surface so corners face up, down, left and right. Place 1 teaspoon filling in the center of each skin. Dip a little of the beaten egg onto the bottom corner, bring top corner to meet bottom corner. Press to seal. Moisten left corner and bring right corner to meet it. Press to seal. [This should give you a little bundle that looks kinda like a nurses hat. S.C.] FRYING: Heat 4 cups oil in wok. Fry wrapped won ton until golden (about 2 minutes). Turn over once. Drain and serve hot. DO-AHEAD NOTES: Deep fry won ton, cool and freeze. To reheat, preheat oven to 350F. Place frozen won ton onto cookie sheets and heat for 12 to 15 minutes. COMMENTS: You may substitute ground turkey for meat in won ton filling. However since turkey is drier and more bland than pork, add a few more water chestnuts and 1/4 tsp. monosodium glutamate to enhance flavor and texture. From "The Chinese Village Cookbook." FRIED WONTON RICE
1 kg ground lean pork, beef, or chicken
1 cup finely chopped mushrooms (optional)
¼ cup finely chopped spring onions / chives
2 tsps. fine salt
1 tsp. fine ground black pepper
1 tsp. white sugar
1 tbsp. oyster sauce
2 tbsps. cornstarch or all-purpose flour
1 pc whole egg
1 pack, large wonton wrapper
Sauce:
¼ cup banana catsup
¼ cup + 2 tbsp. brown sugar
¼ white vinegar
2 tbsps. soy sauce
½ cup water
1 tbsp. cornstarch
1 tbsp. sesame oil

Chinese Fried Vegetable Wontons - Veg Dumpling
Chinese Fried Vegetable Wontons are quick, easy, and versatile snack, these wontons can be deep-fried, steamed or boiled and may be served with any one of the accompanying dipping sauces.
Ingredients
Maida 1 Cup
Corn flour 1/2 Cup
Butter(melted) 2 Teaspoons
salt 1 Pinch
Hot water 1 Cup
Sesame oil 2 Tablespoons
Ginger 1 Teaspoons
Garlic 1 Teaspoons
Green chillies 2 Teaspoons
Carrot (chopped) 1/2 Cup
Beans (chopped) 1 Teaspoons
Cabbage (chopped) 1 Cup
Mushroom (chopped) 1 Tablespoons
Cheese 1/4 Cup
Ajinomoto 1 Pinch
Soya sauce 1 Teaspoons
Spring onions 1/2 Cup
Cornstarch 2 Tablespoons
Oil 2 Cup
Directions:
1. Take maida in a bowl and add corn flour, melted butter, pinch of salt and hot water. Mix all and make a dough. Keep it aside for resting.
2. To make stuffing take little sesame oil in a hot pan. Now add chopped ginger, chopped garlic, green chillies, carrot, beans. Saute them by adding little bit of salt.
3.Add chopped cabbage, mushrooms, cheese and cook properly by adding ajinomoto. Also add soya sauce and spring onions. Switch off the flame and add cornstarch, mix it well and then cook it for a minute.
4. With the dough make thin sheets and cut in to round shape and put the stuffing on each poori.
5.Take some water and apply to the half edge to seal it by folding. Again join the two edges by applying some water. You have to follow the same process with every poori.
6. Once the oil is hot in pan deep fry the wontons. When they become golden remove them from oil and take on tissue plate.
7. Serve them hot with sauce.

For the sweet and sour dipping sauce:
1 cup water
2 tablespoons rice vinegar
3 tablespoons ketchup
5 tablespoons sugar

1 tablespoon cornstarch
3 tablespoons water
For the wontons:
36 wonton wrappers
1 pound ground pork
3 fresh shiitake mushrooms, minced
4 tablespoons cilantro stems, minced
1 stalk scallions, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
2 tablespoons Shaoxing wine
1 tablespoon sesame oil
