How To make Fried Spinach(Rau Muong Xao)
6 ounces Rump steak
1 each Medium onion
1 teaspoon Black pepper
1 1/2 tablespoons Fish sauce (nuoc mam)
1 tablespoon Cornstarch
1 each Fresh spinach
1 each Large tomato
1 each Clove of garlic
3 tablespoons Oil
Trim any fat from steak. Sliced thinly. Chop onion finely and combine with meat, 1/2 teaspoon pepper, 1/2 tablespoon fish sauce and cornstarch. Rinse spinach and cut each leaf into 3 pieces. Slice tomato into thin wedges and crush garlic. Heat 1 1/2 tablespoons of oil in a frying pan. Add remaining garlic and stir fry until fragrant. Add spinach and stir fry for 3 minutes. Add remaining fish sauce and tomato. Stir fry 2 minutes, then remove to a heated serving platter. Heat remaining oil in frying pan. Add meat and stir fry for 5 minutes. Add 2 tablespoons waterif meat sticks to pan. Remove meat from pan and sprinkle over spinach. Sprinkle with pepper and serve.

Water Spinach- we all know this green vegetable as Popeye’s favorite. But it is indeed a fact that water spinach is ranked high among the world’s healthiest foods and there are plenty of reasons for it being so. Also known as ‘kangkong’ or ‘swamp cabbage’, water spinach is one of the popular green leafy vegetables. It is basically herbaceous aquatic or semi aquatic perennial plant that is found in tropical and subtropical regions. There are generally two varieties of water spinach- the ‘Ching Quat’ having a green stem. Just like other dark green leafy veggies, water spinach is a powerhouse of nutrients that benefit your body as well as your skin and brain. It contains abundant quantities of water, iron, vitamin C, vitamin A and other nutrients and can be eaten cooked or raw. It is mostly used in salads as well as other dishes to boost their nutrient content. Juice of water spinach is also very beneficial.
Mince some Garlic, you need about 10 cloves garlic the more garlic the better Tablespoon. In a wok, boil some water add in 1 tsp. Salt. Add in the Water Spinach and take it out right away 30 50 seconds not more . Rinse it with cold water. This will help the Water Spinach stay green and crunchy when stir-frying.
Directions
Thoroughly rinse water spinach in water and transfer to a colander to let the excess water drain clean dirt . Heat the vegetable oil in a pan over high heat. Add garlic and fry about 1 minute, stirring constantly. Add water spinach and continue flipping and turning the spinach to saute it through, about 3-5 minutes. Don’t overcook it, just enough to wilt the leaves and bring out the vibrant green color. Season with salt to taste. Serve hot as a main dish or side dish. Enjoy your meal!!! very healthy dish enjoy

Water Spinach Stir-fry with Garlic Recipe (Rau Muong Xao Toi)
Ingredients
1 bunch Water Spinach
Water
1 tsp. Kosher Salt
2 Tbsp. minced Garlic
2 Tbsp. Olive Oil
Cut 1 bunch Water Spinach stem about 2 inches long. Rinse until clean.
Mince some Garlic, you need about 2 Tablespoon. In a wok, boil some water add in 1 tsp. Kosher Salt. Add in the Water Spinach and take it out right away. Rinse it with cold water. This will help the Water Spinach stay green and crunchy when stir-frying.
Clean the wok and add in 2 Tbsp. Olive Oil and 2 Tbsp. minced Garlic. Saute until slightly brown. Add in the Water Spinach, stir for 1 minute and remove from heat to serve. Usually serve with dipping fish sauce and rice.
