1 9" double pie crust 5 cups Apricot halves 2 teaspoons Lemon juice 3/4 cup Sugar 1/4 cup Flour 1/4 teaspoon Cinnamon 2 tablespoons Butter Heat oven to 425. Prepare your favorite pastry. In a large bowl, combine apricots and lemon juice. Add sugar, flour and cinnamon; toss lightly to mix. Turn into pastry-lined pie pan. Dot with butter. Ingredients: Crust: 2 cups flour (280g) 1 tsp baking powder 80 g butter 2 eggs 60 g sugar
Filling: 90 g sugar 2 tbsp (20 g) cornstarch 2 eggs 1 tsp vanilla essence 300 g greek yogurt 350 g apricots
Directions: 1. In a large bowl combine the flour with baking powder and sugar. Add the cold butter and mix until form the crumbs. Add the eggs and form the dough. You may need some more flour for the dough, the quantity of flour depends on the egg size. Do not over-knead the dough. We need a sandy crust. 2. Put the dough in a 25 cm pan and spread the dough in the pan. 3. Put the pan in the fridge for 30 minutes. 4. In a large bowl add the sugar with cornstarch and mix well to combine them. Add the eggs, and vanilla essence, and mix. After this add the greek yogurt and mix well. 5. Cut the apricots and arrange them over the dough and pour the cream. 6. Bake at 180C for 4 min or until the crust is golden brown. 7. Sprinkle with powdered sugar. 8. Bon Appetit!

For pastry crust: 200 g flour 100 g unsalted butter 1 eggs 3,5 tbsp cool water a pinch of salt
For the filling: 450 g apricot 100g sugar 1 tsp vanilla sugar 1 tsp cornstarch
For top: 80 g flour 80 g oat-flakes 100g sugar 100 g unsalted butter
1. Mix flour, a pinch of salt and butter. Add egg and cool water and mix it until the ingredients will come together. Wrap dough in plastic foil and put in the fridge for at least 30 min. 2. Prepare crumb. Flour, sugar, butter - mix well. Add oat-flakes. Put in the fridge for at least 30 min. 3. Chop apricots. Add sugar, vanilla sugar and cornstarch. Mix well. 4. Heat up the oven at 360F (180C). Spread the dough in the baking pan, making the sides. 3. Spread the apricots over the dough and crust on the top. Bake in preheated oven for 45 min.
