2 tsp semolina
3 tbsp gram flour
4 tbsp maida
1 tsp corn flou
1 tsp salt
1/4 cup water
2 cloves garlic
1 tsp lemon juice

This makes about 24 crullers
INGREDIENTS
Choux Paste
¾ cup 2% milk
¾ cup water
1/2 cup + 2 Tbsp unsalted butter
2 tsp sugar
½ tsp salt
1 ⅔ cup all-purpose flour, sifted
5 large eggs, at room temperature
Crullers
vegetable oil, for frying
icing sugar, for dusting
DIRECTIONS
Choux Paste
1. Bring the milk, water, butter, sugar and salt up to a full simmer over medium high heat. Reduce the heat to low and stir in the flour with a wooden spoon, stirring vigorously until the dough “cleans” the sides of the pot (no longer sticks). Scrape this mixture into a large bowl and use electric beaters or a stand mixer fitted with the paddle attachment and beat on medium speed for a minute or 2 to cool it a little.
2. Break two eggs into a small dish and whisk them just to blend a little. Add these to the flour mixture while still on medium speed and mix until blended. Add the remaining 3 eggs one at a time and mixing well after each addition.
3. Work with this recipe while the batter is still warm.
Crullers
1. Fill a pot with oil so that it is about 2-inches deep, but comes up to only a third the height of the pot. Heat this to 350 F (use a candy/fryer thermometer to measure) or use a tabletop fryer following manufacturer instructions.
2. Fill a fabric (not a disposable plastic) piping bag fitted with a large star tip with the choux paste (you may have to fill in multiple batches). Pipe circles on small pieces of lightly greased parchment paper and gently slide them into the oil trying not to splash, removing the paper. You can also flip the piped crullers onto a slotted spoon and lower them into the oil.
3. Cook the crullers for about 5 minutes, turning them halfway through cooking. Lift the crullers out with a slotted spoon or straining spoon and place them on a paper towel lined plate to cool. Dust with icing sugar and serve immediately.

Beignets aux Pommes, or French apple fritters in English is a seasonal treat I have enjoyed my entire life. It's a dessert my mother used to make for me every Fall when the apple harvest started. Apple beignet will quickly become one of your favorites, as it has been mine.

French Apple Fritters with Salted Caramel and Vanilla Ice Cream
Ingredients
2 apples peeled, cored then cut into 1/2 inch thick slices
1 cup Calvados, or Apple Jack
1/2 cup sugar
1 recipe beignet batter, see below
2 quarts vegetable oil to fry in
confectioner's sugar
1 recipe salted caramel sauce, see below
1- pint vanilla ice cream
Instructions
1. In a large bowl, toss the apples, Calvados, and sugar together until well coated. Cover and let the apples marinate in the refrigerator for at least 2 hours or, better yet, overnight.
2. In a large, heavy saucepan, Dutch oven, or deep fryer, heat
the oil to 350°F. Drain the apples and reserve their marinade. Dip the apples in the batter, coating them fully. Fry them in batches until golden brown, about 5 minutes, flipping the slices a few times to make sure they brown evenly. Using a slotted spoon or spider strainer, transfer them to paper towels to drain.
3. Divide the slices between 4 plates. Dust them with the confectioners’ sugar and top them with a scoop of vanilla ice cream and salted caramel sauce. Serve immediately.
Beignet Batter
An all-purpose batter to dip most anything in and fry.
Ingredients
1.5 cups all-purpose flour
1/2 teaspoon sea salt
1 tablespoon sugar
2 egg yolks
1/4 cup vegetable oil
1 cup sparkling cider.
2 egg whites
Instructions
1. About half an hour before you make the beignets, in a large bowl, combine the flour, salt, and sugar. In a medium bowl, whisk together the egg yolks, cider, and oil. Add the wet ingredients to the dry ingredients and whisk until smooth. Wash out the other bowl and dry well. Add the egg whites to the clean bowl and, with an electric mixer on medium-high speed, beat to medium peaks. Fold the whites into the batter until no streaks of white remain. Let it rest for 30 minutes at room temperature.
Salted Caramel Sauce
A Quick Dessert Sauce
Ingredients
1/2 cup sugar
1/4 cup water
1/4 cup heavy cream
sea salt
1 tbsp butter
Instructions
Caramelize sugar and water in a heavy gauged pot over medium heat. As you start heating the pan notice the small size of the bubbles. The longer the sugar cooks, the more the moisture cooks off the bubbles get considerably larger. Pour in heavy cream when the caramel turns a medium brown amber color. Finish the sauce with two pinches of really good sea salt and a tablespoon of butter.

A very warm welcome back to What’s For Tea :) Today I made this amazing potato fritters! An absolute chip-shop classic! Thick fluffy sliced potato surrounded by a crunchy beer batter…these are so delicious! Perfect to eat on their own but often accompanied by battered fish or as I’m doing, in a white buttered roll with brown sauce! :)

What you’ll need (Makes 6 flitters)
2 Large potatoes (baking potato size) peeled & thickly sliced
113g/4oz Plain (all purpose) flour
50ml/1.6floz Olive oil
25ml/0.8floz Water
125ml/4.2floz Beer or fizzy (carbonated) water
1/2 Teaspoon salt
Vegetable oil for deep frying your fritters
