BACON, LETTUCE AND TOMATO Combine 3 tablespoons mayonnaise with 3 tablespoons julienned basil, and spread on cut sides of focaccia. Layer bottom half with curly leaf lettuce, 1 large tomato, sliced, and 4 sliced of crisp cooked bacon. Sprinkle with freshly ground pepper. TUNA In a small bowl, combine 1 can (6 1/8oz) water packed tuna, drained, 2 table- spoons finely chopped red onion, 2 tablespoons finely chopped celery, 2 table- spoons mayonnaise, 1 tablespoon chopped capers, 1 teaspoon fresh lemon juice and a pinch of freshly
ground black pepper. Spread bottom half of focaccia with tuna mixture, topped with 1 large tomato, sliced and 2 large lettuce leaves. ROASTED PEPPER, MOZZARELLA AND BASIL Drizzle each cut side of toasted focaccia with 2 teaspoons extra-virgin olive oil. Layer bottom half with 6 ounces of thinly sliced mozzarella cheese, 1/3 cup basil leaves and 1/2 cup sliced roasted and peeled red peppers. Sprinkle with salt and freshly ground black pepper. Green chilli 1
Onion 1
Green capsicum 1/2
Yellow capsicum 1/4
Red capsicum 1/4
Zucchini 1/4 cup
Boil corn 1/4 cup
Boil french beans 1/4 cup

Red chilli sauce 1tsp
Red chill powder 1/2 tsp
Mix herbs 1tsp

Schiacciata is a Tuscan flatbread made with the mix of a pre-fermented dough (Biga) and a main straight dough. It requires more yeast than normal focaccia or pizza as it's baked the same day the dough is mixed.
Its name in Italian literally means Pressed Down, Schiacciare (to press down) to describe the act of removing the gases created by the rising of the dough. After a series of rest, the Schiacciata is being dimpled like normal focaccia to resemble the classic look, and usually stuffed with some great hams, cheeses, or salads. Very summery, truly good.

FOCACCIA SANDWICH with FRIED CHICKEN CUTLET!
You know when you go to your favorite Italian deli and order the usual? This sandwich was our usual at one of our favorite delis in upstate New York. The crispy fried chicken cutlet, herb mayo, peppers, artichokes, and melted mozzarella. Literally the best focaccia sandwich ever!
FOR THE RECIPE:

FOR THE FOCACCIA:
425 gr flour
1 1/4 cup water
1 1/4 tsp dry yeast
1/4 cup water
1/2 tbsp salt
1 pinch sugar
olive oil
FOR THE HERB MAYONNAISE:
1 cup mayonnaise
1 sprig of rosemary, chopped
1 basil leaf, chopped
1 tsp dried oregano
1 tsp dried parsley
1 tsp garlic oil*
1 tsp balsamic vinegar
FOR THE FRIED CHICKEN:
3 chicken breasts
2 eggs
1/4 cup milk
2 cups panko
2 cups flour
canola oil
FOR THE TOPPINGS:
1 red bell pepper
1 garlic clove
sliced mozzarella
arugula
1/2 lemon’s juice
1 jar pickled artichoke hearts, sliced
