How To make Fish Relish Sambal Ikan
Stephen Ceideburg 4 oz Tuna fish, or:
3 oz Eel or:
3 oz Ikan teri
1 c Thick santen (coconut milk)
4 Cloves garlic
3 Shallots, peeled and chopped
4 Kemiri (candlenuts)
3 Cabe rawit or:
2 ts Chilli powder
2 tb Tamarind water or
2 ts Tomato puree
1 ts Brown sugar
Salt 2 tb Vegetable oil
I find that the easiest and tastiest Sambal Ikan is made with canned tuna fish. Sambal made with eel, however, is also delicious; cut the eel up very small and wash it in vinegar. In Indonesia we make this sambal with ikan teri or ikan bilis (tiny dried anchovies). Pound the garlic, shallots, kemiri and cabe rawit into a paste. Fry this paste in vegetable oil in a wok for about half a minute. Put in the tuna fish, eel or teri; stir-fry for 1 minute and add the tamarind water, or tomato puree, sugar and salt. Stir in the santen, and go on simmering until the mixture becomes thick. This sambal can be served hot or cold.

Sharing this sambal fish topped with generous squeezes of calamansi juice. Perfect with hot fragrant rice. Yummy!
INGREDIENTS for the Recipe
1 fish (around 900g )
1 red chillie
1 green chillie
Oil for frying
To be blended
5-6 red chillies
4 candlenuts
8-10 shallots
5-6 cloves of garlic
1 cm piece belacan
2 lemongrass white part
2 tbsp chillie paste
Himalayan pink salt
Sugar
Mushroom/ chicken granules
3-4 calamansi lime juice
Method:
Wash and clean fish, cut two slits on both sides of fish. Wipe dry with paper towels. Rub with a little himalayan pink salt and dab with cornflour on both sides. Fry in medium hot oil until both sides are golden brown.
Meanwhile transfer all ingredients to be blended into the blender. Add 2 tbsp of oil & a bit of water. Give a few blitzs.. Fry blended ingredients in leftover fish oil until oil separates. Add the green and red whole chillies. Let them simmer for a while and then add in the fried fish to coat all over. Dish up and squeeze juice from 3-4 calamansi limes on top of fish. Serve hot with rice. Enjoy!

How to make a simple Indonesian Chili Sauce (Sambal Balado).
Balado is a spicy bumbu (spice mixture) found in many Indonesian cuisine.
Bahan / Ingredients:
- 5 siung Bawang Merah / 5 cloves Shallots
- 5 siung Bawang Putih / 5 cloves Garlic
- 1/2 sdt Garam / 1/2 tsp Salt
- 1/2 sdt Lada Putih / 1/2 tsp White Pepper
- 2 sdm Minyak / 2 tbsp Cooking Oil
- 2 bh tomat / 2 large Tomatoes
- 50 gr cabai merah keriting / 50 gr Red Chilies
- 5 lbr Daun Jeruk / 5 pcs Lime leaves

Malaysian Grilled Stingray | Ikan Pari Bakar [Nyonya Cooking]
Stingray is delicious when marinated with spicy chili paste and grilled. This dish reminds me of splendid Malaysia where hawker stalls sell it at roadsides!
As a passionate lover of grilled fish, I am very specific about the type of fish used. No matter how I see it, It has to be stingray. Stingray is not easily found in Germany. When I chance upon it at the local fish market, I knew I just have to whip up this fantastic dish. There is no way I am going to let the opportunity pass. Besides that, it has also been such a long time since I last had Malaysian grilled fish. The **spicy marinade filled with herbs** makes this Malaysian grilled fish one of its kind.
If you are not able to find stingray, try looking out for **skate** which belongs to the same family. They should be very similar. Otherwise, you can opt for any other type of white fish. One way of enhancing the flavour of this dish is to **grill the fish over a piece of banana leaf**. It can then be served with a bit of **calamansi juice** or **lime juice** squeezed over it.
To accompany the grilled fish, it would be best to prepare the dip using a combination of soy sauce, shallots, chillies and lime or calamansi juice. Every mouthful would leave you begging for more. I introduced this dish to my friends who are non-Malaysians and they were hooked. I bet you would as well once you give it a try!
