How To make Fish In Parchment
6 ozs salmon fillet
1 tsp Dijon Glaze
1/8 c bell pepper of 3 colors
seeds, pits removed and julienne-cut 1 tsp fresh lemon juice
1/8 red onion
thinly sliced and separated into rings 1 12 inch squa parchment paper
Preheat oven to 450 degrees F. with oven rack in center of oven.
Brush fish with glaze or other seasoning and place it in center of parchment= =2E Sprinkle lemon juice over the peppers and place them and onion slices around the fish. Wrap the edges of the paper over the fish, rolling edges tightly t= o prevent steam from escaping. Place the parchment package in an oven-proof pa= n and bake for 5-8 minutes, until fish is cooked. Remove from the oven, and pr= ick the parchment package with a sharp knife to release steam.

How to make baked Cod in parchment paper with fresh vegetables
Grocery List:
1 red pepper
1 zucchini
1 medium carrot
1 yellow squash
2-6 ounce Cod fillets
1 small lemon
All purpose seasoning (I used Emeril's all purpose seasoning blend)
Olive oil
Parchment paper (one side measuring 12 inches)
Instructions: Preheat oven to 375 degrees
Measure 2 separate pieces of parchment paper...12'x20''
Generously coat each Cod fillet with seasoning-set aside
Cut all veggies into 'matchstick' size pieces, divide in half (this recipe is for 2 separate servings)
Arrange one half of the cut veggies on one side of the first piece of parchment paper, drizzle with olive oil, salt and pepper to taste
Lay one seasoned fillet on top of veggies
Place 3 lemon halves on top of fillet
Fold over parchment paper onto fillet and veggies
Beginning in the corner, make small folds...one over the other... moving along the open end until you get all the way to the other side, place on large baking sheet
Repeat process with other fillet
Bake 12-15 minutes (I baked mine for 13 minutes)
Serve with rice, eat right off the paper!
It's tender, moist and delicious!

Halibut en Papillote with Lemon and White Wine
Serves 2
Ingredients:
2 fillets halibut (about 6 ounces each)
salt
freshly ground black pepper
½ lemon, sliced
4 fresh thyme sprigs
1 egg white, lightly beaten
2 tablespoons butter
¼ cup white wine
Directions:
1. Pre-heat the oven to 400˚ F.
2. Cut out 4 large squares of parchment paper – about 13-inches by 15-inches each. Place a fillet of halibut on one half of each piece of paper. Season the fish very well with salt and pepper. Top each fillet with lemon slices and thyme sprigs. Brush the outer rim of the parchment squares with the beaten egg white. Dot each fillet with 1 tablespoon of butter and sprinkle 2 tablespoons of white wine on each piece of fish.
3. Fold up each parchment square by folding one half of the paper over onto the other half and press together. Make a series of straight folds on the outer rim of the squares to seal the edge together.
4. Place the four packages onto a baking sheet and bake in the oven for 10 to 12 minutes. The package should be puffed up and slightly browned when fully cooked. The fish should feel firm to the touch (you can often, carefully, press on the fish through the paper).
5. You can serve these simply with the parchment paper already cut open to reveal the insides, have your guests cut open the packages at the table, or remove the parchment completely, transferring the tasty insides to a plate.

Salmon in Parchment Paper. Salmon en Papilotte is a salmon baked in parchment paper. Salmon comes out moist and tender. Salmon en papilotte is very easy recipe. I am cooking my salmon in parchment paper with asparagus and small potatoes, but you can use any vegetables of our choice.
I have 2 salmon steaks, 12 oz each.
