How To make First Hermits
Preheat Oven to 350~ 20 Min - Work Time
40 Min - Total Time
1 3/4 c Flour
1 t Cinnamon
1/2 ts Allspice
1/2 ts Nutmeg
1/2 ts Baking soda
8 tb Unsalted butter (marg/short)
At room temp. 1 c Brown sugar
1 Egg
1 t Vanilla extract
1 t Lemon zest
1/4 c + 4-6 Tb Milk
1/2 c Dates, pitted, chopped
1/2 c Golden raisins
1/2 c Walnuts, chopped
1 1/2 c Icing sugar
PER COOKIE: 86 Calories
1 g Protein
3 g Fat
18 mg Sodium
15 g Carbohydrates
10 mg Cholesterol
Preheat oven to 350~. Combine flour, spices, & baking soda. With an electric mixer at medium-low, beat butter & sugar until fluffy. Add egg, vanilla, & lemon zest, & beat until combined. Beat in half the flour mixture. Add 1/4 milk, then beat in remaining flour mixture until well blended. Stir in dates, raisins, & walnuts. Drop by rounded teaspoonfuls onto an ungreased baking sheet. Bake until browned, about 10 min. Stir about 4-6 tbsps of milk into icing sugar to make a thin glaze. Spread the glaze on the cooled cookies.

Bea used to pack these bites of goodness into the lunch bags of her 7 children when they were young and later shipped them off in care packages when they went away to college. Bea adds coffee which bring a little extra depth of flavor to the cookie and a little bit of love which of course is always her secret ingredient.

A New England molasses cookie, these hermit cookies are soft and chewy and made with ginger, molasses and raisins. Perfectly balanced with a pinch of salt.

1 cup shortening
2 cups packed brown sugar
2 eggs
1/2 cup cold coffee
3 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
2 1/2 cups raisins
1 1/4 cups broken nuts
Mix shortening, sugar and eggs. Stir in coffee. Measure flour by dipping method or by sifting. Stir all dry ingredients together then blend into shortening mixture.
Preheat oven to 400 (I did mine at 375). Drop rounded teaspoons of dough about 2 apart on parchment paper covered cookie sheet.
Bake 8 - 10 minutes or until almost no imprint remains when touched lightly in the center.
If using self rising flour, omit the baking soda and salt.

Ingredients:
1 cup packed Brown Sugar 1 egg 1 tsp Vanilla
¼ cup strong Coffee cooled 1¾ cup All Purpose Flour ½ tsp Baking Soda
¼ tsp Salt
1 tsp Cinnamon
½ tsp Nutmeg
How To Make Hermit Cookies:
½ tsp ground Allspice or ground Cloves
1 cup Raisins, soak in boiled (not in boiling) water for 10 minutes
1 cup your choice of chopped Pecans, Walnuts or Almonds
1) Preheat oven to 350⁰F
2) In a mixer cream butter and sugar
3) Add egg, vanilla, then coffee
4) On slow speed add flour, baking soda, cinnamon, nutmeg, allspice, careful not to over mix
5) Fold in by hand the raisins and nuts
6) Use 2 teaspoons to drop dough onto parchment lined or greased cookie sheets
7) Bake for 12-14 minutes
8) Place on cooling racks, once cooled, place in a loosely covered container. Best to be consumed within a few days, however, they can be frozen for up to 1 month.
There are many different versions of this classic old fashioned cookie that can be adapted to your preferences. The great thing is that I could use up some of the coffee nearing expiration!!! In my opinion some versions didn't use enough spice! Dates were also an option that I omitted. I think next time I will try Almonds or Walnuts or both instead of Pecans. Whichever adaptations you choose, be sure to enjoy it with your favourite hot beverage!
