ROASTED VEGETABLES | easy oven-roasted vegetable recipe
3 cups broccoli florets
3 cups cauliflower florets
1 bunch radishes halved or quartered depending on size (about 1 cup)
4-5 carrots peeled and cut into bite-sized chunks (about 2 cups)
1 red onion cut into chunky pieces* (about 2 cups)
1-2 tablespoons olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1 teaspoon garlic powder
INSTRUCTIONS
Preheat oven to 425 degrees F. Lightly coat two rimmed baking sheets with olive oil or cooking spray. Place broccoli, cauliflower, radishes, carrots and onion in a large bowl.
Season with olive oil, salt, pepper, and garlic powder. Gently toss everything together.
Divide evenly amongst rimmed baking sheets. You don’t want to crowd the veggies or they will steam.
Roast for 25-30 minutes, flipping the veggies halfway through. Serve and enjoy!

NOTES
I like to cut each half of the onion into thirds and then slice across.
It’s important that all of the veggies are cut into fairly uniform pieces so they cook at the same time.
Flipping the veggie halfway through is optional. If you feel lazy, you can skip it. But if you want caramelization on both sides of the veggies, be sure to flip!
Ultimately, you need to use 10-12 cups of veggies – the exact mix doesn’t matter.

Full recipe for Baked vegetables with white sauce
Prep time: 10 mins
Cooking time: 20 mins
Serves: 4
Ingredients:
• Butter 3 tbsp
• Refined flour (maida) 3 tbsp
• Milk 200 ml
• Salt to taste
• Pepper powder a pinch
• Nutmeg powder a pinch
• Processed cheese 200 gm
• Olive oil 1 tbsp
• Carrot ½ cup (diced & blanched)
• Mushroom ½ cup (diced)
• Green peas ½ cup (blanched)
• Sweet corn ½ cup (blanched)
• French beans ½ cup (diced & blanched)
• Capsicum ½ cup (diced)
• Broccoli florets ½ cup (blanched)
• Salt to taste
• Black pepper a pinch
• Oregano 1 tsp
• Red Chilli flakes 1 tsp
Method:
• Heat butter in a pan on medium heat, add flour, stir and cook well ensuring the colour doesn’t changes a lot.
• Add the milk slowly and gradually and keep whisking to avoid lumps.
• Add salt & pepper, nutmeg powder and grate processed cheese, mix well and cook further for 2-3 minutes, make sure the sauce is silky smooth without any lumps.
• Set a wok on medium high heat, add olive oil add the veggies, salt & pepper, oregano and chilli flakes. Sauté for 2-3 minutes, add the freshly prepared white sauce, mix well and cook for 2-3 minutes.
• Pour the veggies with white sauce in a baking dish and grate some processed cheese over it.
• Preheat the oven for 10 mins and bake it at 180°C for 10-12 minutes.
• Serve hot with freshly toasted garlic bread.
For garlic bread
Ingredients:
• Melted butter ½ cup
• Garlic 4 tbsp (chopped)
• Fresh coriander 1 tbsp (chopped)
• Garlic bread 1 loaf
Method:
• Mix the melted butter with finely chopped garlic and fresh coriander leaves.
• Slice the garlic bread loaf diagonally and apply the freshly made garlic butter on the bread slice surface.
• Heat a grill pan or a normal pan on medium heat, toast the garlic bread on both the sides until crisp and golden brown.

Ingredients
eggs 2
milk 100ml
salt 1.5g(1/4tsp)
baking soda 3g(3/4tsp)
all purpose flour 150g(1cup)
vegetables(350-400g): onion, bell pepper, green onion, potato, and tomato
cheddar cheese 80g
shrimps 16(optional)
black pepper
parsley flakes
Recipe:
350-400g vegetables
Dice all the vegetables
Shred a peeled potato
Add the vegetables to a bowl
Crack 2 eggs in a different bowl
Pour 100ml milk with the eggs
Add 1/4tsp salt
3/4tsp baking soda
Mix well
Add 1cup of all purpose flour
Mix well
Pour the egg mix into the vegetables
Baking pan size: 22.9x22.9cm
Pour the mixture into the pan
Sprinkle 80g cheddar cheese on top
Place 16 raw shrimps on top
Black pepper
Sprinkle parsley flakes on top
Bake for 25 minutes at 180°C/356°F

How To Make A Perfect Roast Vegetable Salad - The ultimate guide!
Who says salads have to be raw? There’s something delicious about a roasted vegetable salad in any season! I Make this Complete Meal Roast Vegetable Salad all year-round!
Because all vegetables cook at different rates, there’s a little skill and timing involved, but don’t worry it’s very easy. You first start with the hardest vegetables, the potatoes and sweet potato. The potato is still harder than the sweet potato, so you want to cut the pieces smaller, this way they finish cooking at the same time. Once these are almost cooked, you then add the softer vegetables. Finally, the tomatoes. Remember, it’s a salad, not a roast, therefore you don’t want to overcook the vegetables, you simply want to extract more flavour from them but still retain their integrity. Once cooked, simply toss the cooked vegetables (still warm) into your favourite dressing. I added mine if that helps. For another level, try frying some halloumi cheese pieces, it makes a world of difference and turns this salad into a complete meal.
