1 l Pitted dates 2 c Water 1/3 c Tahini (old fashioned peanut butter May be substituted) 1 c Wheat germ 9 c Old fashioned rolled oats 2 ts Baking powder 2 ts Baking soda 1/2 ts Salt 2 1/2 ts Vanilla 2 c Chopped toasted pecans 2 1/2 c Raisins Chop dates in food processor. Add part or all of the water and blend until dated are pureed. Pour puree and any remaining water into a very large mxing bowl. Add tahini and blend well. Add wheat germ, oats, baking powder, baking soda, and salt and blend well. Add vanilla while beaters are mixing the dough. Slowly blend in nuts and raisins. Batter will be very stiff. Blend until all ingredients are evenly distributed. Preheat over to 350 degrees. Drop onto non-stick cookie shhet and flatten with a spoon. Or shape by hand into desired shapes. These cookies will not flatten or spread. They may be baked close together. Bake 12 to 15 minutes or more, depending on sides, at 350 degrees. Store in refrigerator. -----

Ingredients: 2 Cups quick oatmeal ½ cup all purpose flour 2 ½ Tablespoons vegetable oil 2 ½ Tablespoons Maple Syrup 1/4 Teaspoon salt 1/4 Teaspoon Baking powder 3/4 Cup water 200g Date paste
Instructions
Finly ground the instant (quick) oats in a food processor. Place in a medium bowl. Add flour, salt, baking powder, maple syrup and vegetable oil. Mix all together, then add water gradually so you can control the consistency of the dough. Take a small ball of date paste, and a medium ball of the oatmeal dough. Fill the dough with date paste, close firmly and flatten with your hands palm. Repeat. Place cookies in a baking sheet covered with parchment paper. Bake in preheated oven 180°C/ 365°F for 7 minutes or until light golden edges. Cool down before serving. Enjoy!

These Healthy Oatmeal Date Cookies are dense, moist, and chewy. They make a great on-the-go breakfast or after school snack option.
Sugar-free oatmeal and date cookies
2 cups of pitted dates 250 g 1/4 cup maple syrup 60 ml 1/4 cup vegetable oil 60 ml 1 cup quick oat flakes 100 g 1 1/2 cup all-purpose flour 200 g 1/2 tsp ground ginger 1/2 tsp ground cinnamon 1/2 tsp of salt (optional)
Preheat oven to 375˚F Soak the dates in boiling water for 5 minutes. Drain and transfer to a food processor. Add maple syrup, oil and blend. Add quick oat flakes, all-purpose flour, ground ginger, ground cinnamon, salt and process. Roll into 8 balls; place, 4 inches apart, on baking sheet lined with parchment paper. Flatten with fork. Bake for 12 to 15 minutes.
