INGREDIENTS:
1 large eggplant
2 small mushrooms
1 extra firm tofu (397 grams)
2 tbsp olive oil
4 cloves garlic
1 small ginger
1 mini red pepper
2 tbsp olive oil for frying
spring onion
For the sauce
1/2 cup water
1 tsp cornstarch
1 tbsp soy sauce
1 tsp sesame oil
For boiling the eggplant and mushrooms
4 cups water
1 tsp salt

Joy Kitchen Joy – Resepi Terung Panjang Dengan Ayam Campuran Tauhu Goreng
A. Bahan Utama
1 Isi Ayam – 250g - dicicang
3 Terung Panjang – potong sama besar
2 Ubi Kentang - potong sama besar
3 Tauhu Putih Keras – potong sama besar
1 Tangkai Daun Bawang – dipotong kecil-kecilan
B. Bahan untuk ditumis – dipotong kecil-kecilan
1 Bawang merah besar
4 Ulas bawang putih
1 Inch Halia
1 Cili Merah
C. Sos yang diperlukan
3 Sd Besar Kicap Cair
3 Sd Besar Kicap Pekat
2 Sd Besar Sos Tiram
2 Sd Besar Serbuk Cili
90ml Air suam
Garam – secukup rasanya
Cara-cara memasak: -
1) Tauhu putih keras perlu digoreng dulu dan disimpan tepi
2) Selepas kuali panas, sila menuang 3 sd besar minyak masak dan masukkan semua bahan tumis (B) satu demi satu.
3) Kemudian masukkan isi ayam dan tumiskan dengan bahan – bahan (B)
4) Setelah itu, boleh masukkan sos-sos serta serbuk cili, selepas itu tuang segelas air 60ml
5) Selepas 5 min, boleh masukkan terung-terung dan ubi kentang & gaulkan sebatian
6) Tutupkan sebentar masakkan selama 5 min untuk lebih cepat masak terung dan ubi kentang.
7) Akhir sekali selepas buka penutup kuali, masukkan tauhu putih goreng dan taburkan daun bawang dan bolehlah dihidangkan dengan nasi putih.

Thai Basil Eggplant Stir Fry | Woo Can Cook
hello hi everyone! Wesley here. Today we’re diving back into our series dedicated to actually decent vegetarian recipes with a shot at one of my favorite classic Thai stir fries, which is a Thai basil eggplant. For those following along, in this series, we have been diving into the wonderful world of stir fries and recipes that are not necessarily designed to be vegetarian, but simply occur this way because of the proteins and veggies that the dishes highlight. This tends to happen a lot in tofu-centric chinese cuisine, but today we’re actually gonna be touching on one of my favorites from Thai wok cooking, focusing (as you might guess) on the use of eggplant. As the name implies, a Thai basil eggplant stir fry is a relatively straightforward but still deceptively tricky one, making use of Thai basil, eggplant, and a quick dark soy sauce and fish sauce base. Those that have had (bad) versions this dish however (or really, any bad eggplant stir fry), will be familiar with the sensation of biting into a piece of eggplant, only to squeeze out a puddle of cooking oil, which happens all too frequently because of the spongey nature of the eggplant. So, today we’ll be diving into my favorite way of properly stir frying this deceptively tricky vegetable, and just generally how to NOT end up with a giant bowl of mushy, goopy, oily eggplant, which nobody wants.
