How To make Double Nut Biscotti
2 c All-purpose flour; more if n
1/2 c Ground almonds
1 c Sugar
2 Eggs
1/4 c Dark rum
1/4 c Amaretto; or nocello
1 ts Vanilla extract
1/2 ts Ground cinnamon
2 ts Baking powder
1 c Walnuts
1 c Blanched almonds; whole
Recipe by: Glorious Liqueurs, Mary Aurea Morris Preheat oven to 350 degrees; lightly grease 2 cookie sheets with softened butter and dust with flour, shaking off the excess. In a large bowl, combine the flour, ground almonds, sugar, eggs, rum, liqueur, vanilla extract, cinnamon and baking powder; beat with a heavy wooden spoon until well blended. Stir in the walnuts and whole almonds. The dough should be soft and a bit sticky, but it should hold its shape when picked up. If it is too runny, add more flour. With your hands, scoop up half of the dough; shape into a long cylinder, about the length of a roll of paper towel. Place on the cookie sheet so that it does not touch the edge of the pan. Repeat with the second half of the dough. Bake for 45 to 60 minutes, or until golden brown and firm. They will spread during baking. Remove the cookie sheets from the oven to a wire rack; let stand for 15 to 20 minutes. Carefully loosen the cylinders from the cookie sheets, using metal spatulas. Let stand on a cutting board until almost at room temperature. With a serrated bread knife, cut each of the cylinders into crosswise slices about 1-inch thick. Place the sliced, a cut side up, on the cookie sheets. Return the cookie sheets to the oven for about 10 to 15 minutes to let the cookies out and turn slightly golden. Cool completely before storing. INGREDIENTS
- 2 tablespoons butter, room temperature
- 2 eggs
- 1 cup sugar
- zest of 1/2 an orange
- 1 tablespoon milk
- 1 tablespoon honey
- 1/8 tsp salt
- 1/4 teaspoon baking powder
- 2 teaspoon vanilla
- 1 + 3/4 cups flour
- 1 + 1/2 cups toasted nuts (I use sliced almonds)
- 1 cup dried fruit
DIRECTIONS
Cream the butter and eggs (you can of course use an electric mixer). Add sugar, zest, milk, honey, and a pinch of salt. Mix in baking powder, vanilla, and flour. Finish by adding nuts and dried fruit.
On a parchment- or Silpat-lined baking sheet, form two rectangles, 14 inches long and approximately three inches wide. Bake at 350 degrees for 25-30 minutes until lightly golden. Remove from oven and slide onto a cutting board and slice into one-inch pieces on a diagonal. Place back on baking sheets, cut side down, and bake at 325 degrees for 12-15 minutes longer, watching closely so they do not burn (check the bottoms for burning).
Remove from oven and cool on wire racks. Once cooled, the biscotti will be dry and perfect for dunking into a hot cup of coffee. This recipe can be adapted with different fruits, nuts, and flavorings.

Double Chocolate Holiday Biscotti

Ingredients
2 1/4 cups all-purpose flour
1/2 cup granulated sugar
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1/4 cup orange marmalade
1 tablespoon grated orange zest (about 2 oranges)
1/2 teaspoon kosher salt
3 large eggs, at room temperature
1/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 cup bittersweet chocolate chips
Directions
Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper, dust with 1/4 cup flour and set aside.
In a medium bowl, combine the sugar, butter, orange marmalade, orange zest and salt. Using a handheld mixer, beat on medium speed until the mixture is smooth, light and fluffy, about 2 minutes. Beat in the eggs one at a time. Add the remaining 2 cups of flour, cocoa powder and baking powder and beat until just blended. Using a rubber spatula, stir in the chocolate chips.
On the prepared pan, form the dough into a 3-by-13-inch log. (Using a small offset spatula or dusting your hands with flour will help keep the dough from sticking to your hands.) Bake until the log is firm to the touch, cracked on top and looks dry, about 35 minutes. Cool for 30 minutes on the tray.
Place the log on a cutting board and using a serrated knife, cut the log on a diagonal into 1/2-inch slices. Arrange the biscotti cut-side down on the tray. Bake until they are a dry and fragrant, an additional 20 to 25 minutes. Transfer the biscotti to a cooling rack and cool completely.

A biscotti is a twice baked biscuit that's a staple in many Italian homes. Personal Chef Bill Collins is a Personal Chef showed us how to make some delicious double chocolate walnut biscotti.
Chocolate Chip Walnut Biscotti | Biscotti Al Cioccolato E Noci
✿ INGREDIENTS ✿
Flour - 3 cups
Baking Powder - 2 teaspoons
Salt - 1/4 teaspoon
Canola Oil - 1 cup
Sugar - 1 cup
Eggs - 3
Crushed Walnuts - 1 cup
Chocolate Chips - 1/2 cup
Cinnamon & Sugar Topping - 1 teaspoon of cinnamon and 2 tablespoons of sugar
✿ DIRECTIONS ✿
∙ In a large bowl, add eggs oil and sugar and beat for one minute.
∙ Start adding in 2.5 cups of flour and mix for a couple minutes (add in the salt and baking powder during this step as well).
∙ Use the remaining 1/2 cup of flour and spread on the counter where you will be working the dough.
∙ Add in the chocolate chips and walnuts and work the dough for a couple minutes until the flour is form the counter is absorbed into the dough
∙ Cut chunks of dough and begin forming them into logs,. Place on a parchment lined baking sheet.
∙ Once the logs are formed, flatten them out by pushing them down with your fingers.
∙ Sprinkle the cinnamon sugar mix over the top of the logs
∙ Bake them at 350º for 25 minutes.
∙ Cut the logs into biscotti while the logs are still warm from the oven, use the angled cut technique just like Nonna.
